One pan Mexican skillet with cauliflower rice and kale. Too easy and so friggin good, yo! I found a massive bag of ALREADY DONE FOR YOU frozen cauliflower rice at Costco the other day. Yes, please! 🙌🏼👍🏼😆 Here's a general idea of how to make this dish for yourself💕
•over medium heat, brown 1 lb grassfed beef
•add seasonings to your liking (cumin, chili powder, salt, pepper, garlic powder, onion powder) while the beef is cooking.
Once beef is fully cooked lower the heat just a tad and then:
•add 1 cup diced tomatoes
•add cauliflower rice (I used a 12oz bag of frozen)
•add finely chopped kale and toss until fully mixed together
•check seasonings and add more as needed
•sprinkle organic/grassfed or raw cheese and cover to melt
~serve with avocado for a healthy boost of FAT.
