Today my daughter turns 17. For 17 years and 8 months I have loved her unconditionally. One of the forms in which I show her my love is cooking for her. She really liked this veggie platter!
Ingredients: boiled corn, roasted eggplant, zucchini and potatoes, red bell pepper, onions, tomatoes, cucumber, nuts, almonds, olive oil, salt, pepper, seasoning herbs and lemon zest.
The time to prepare is 30-45 min for the roasted veggies+corn, and then under 5 minutes for cutting the raw vegetables and plating. The yield is 2 servings.
Boil the corn covered with leaves. Roast veggies in the oven, on parchment paper. Then slice, cut, dice and plate the beautiful ingredients as you wish.
