The Final Four Stages of Nacho
I had posted an IG story, earlier tonight, which highlighted the beginning stages for building a proper plate of what I Iike to call, my "Nachos Nate!" Many thanks to all who had a chance to view my story and for those of you, who might not have had the chance.. Well, no worries, because, here is a quick recap:
1.) First, I started to build my Nachos Nate, by taking 30, small, white corn tortillas and stacked in 3 sets of 10, I sliced them into triangles... Then, I fried them in Peanut Oil, until golden brown, and once removed from the oil, the chips were tossed with a Chile-Lime Salt.
2.) Next, I made Mexican Rice...
(White Rice, Chicken Stock, Diced Tomatoes, Diced Green Chiles, Roasted Garlic, Goya Sázon, Cumin, Cilantro, as well as Salt & Pepper)
3.) While the rice was cooking, I heated up some of my "Taco Tuesday" leftovers... Refried Pinto Beans, as well as my Shredded Flank Steak, which had been stewed in my Beer & Onion based Molé.
4.) Once the rice was finished, I began to build my nacho masterpiece, by layering the tortilla chips, into a large pie plate, adding a layer of the cooked rice, a handful of the shredded steak, and then I spread some of my Nacho Cheese Sauce over it all, plus a few squirts of Taco Sauce, before adding a layer of refried beans... I repeated the same steps for the second level, but instead of the Nacho Cheese, I added a layer of Shredded Cheddar, to top off the beans.
5.) Finally, when the Nachos were constructed, they were placed under a low broil, where all of the layers melted together & the Cheddar became gooey, as well as golden brown.
6.) To finish my "Nachos Nate", I added Guacamole to one side of the plate, Salsa on the other side, and drizzled it with a Ranch-Chipotle Sour Cream, thus representing the colors of the Mexican Flag, and hopefully, creating a plate of Nacho's especiales, that would make even their inventor, Ignacio "Nacho" Anaya... Proud!
