Monday lunch 😋
I made a rice salad using a combination of basmati rice & black rice mixed through with broccoli, asparagus, mushrooms, kidney beans, red pepper, celery and red onions.
Flavoured with a homemade dressing of olive oil, chilli powder, seeded mustard, red wine vinegar, balsamic vinegar, lemon juice, and fresh lemon thyme herb 🌿 plucked from our own veggie garden.
Garnished with toasted pine nuts for the crunch factor 😊
