I love Omelettes because you can literally use any ingredients you have on hand for a delicious filling. As long as you're willing to be creative, you can make from the most simple to the most scrumptious omelette for breakfast, lunch or even dinner...There are no rules!
Today, I had this Mushroom and scallions Omelette for breakfast. I added just a little cheese because I didn't want to overpower the delicious flavor of my veggies. For the scallions I used both the white and the green parts.
And for a boost to my immune system I had a small green juice made with power greens (kale, spinach and chard), orange, banana, ginger and lime.
I think I'm ready for a fun Friday! 😊
