4 boneless pork chops
Salt and pepper
1 Tbsp canola oil
1 cup red salsa
1 cup peach preserves
1 tsp minced garlic
1 tsp ground cumin
Cook the rice, as directed. Heat the olive oil in skillet and brown both sides of the pork chops. Season with salt and pepper.
In a mixing bowl, combine the red salsa, peach preserves, minced garlic and ground cumin. Pour over the browned pork chops and let simmer over medium low heat for 8 to 10 minutes, or until pork chops are cooked through. Let rest for 5 minutes before serving.
