The recipe for this week is "Nankhatai" by Nikhil Singh.
Nankhatai are popular Indian shortbread biscuits, also known as Indian cookie.
Nankhatai flavored with cocoa powder and vanilla will just melt away in your mouth!
Recipe Type: Snack
•1 cup maida
•2 table spoon sooji/rava
• 1/4 teaspoon baking soda
•A pinch of salt
• 1/2 cup desi ghee + ghee to grease pan
•1/2 cup powdered sugar
•flavouring (here I have used vanilla extract and cocoa powder)
Steps to make:
•One of the most important step is to make the base of nankhatai that gives it the creamy texture.
•Take sugar and ghee in a bowl and start mixing it with a wire whisk . Note that you have to mix it well, till sugar and ghee form a white homogenous mixture with a creamy consistency.
•Once this is done, you need to add flour, salt, flavouring and baking soda in it.
•After adding all the dry ingredients, knead it into soft dough.
•Pre heat the oven at 180 degree celsius.
•Divide the dough in smaller portions.
•Grease the baking pan with ghee and place the small dough balls in it.
•Place them in the oven at 180 degree celsius for 15 - 20 mins.
•Once this is done, place them on the cooling rack.
•When completely cooled, store in an airtight container and enjoy them with your evening tea!!
You can use any flavouring to make delicious nankhatai.
1. Safforn pista (Kesar pista)
Take few strands of saffron and a teaspoon of milk in a small cup soak them till they release their flavour in the milk, use this to flavour you Nankhatai along with 2-3 tea spoons of grounded pista. Once you have made smaller balls of dough, place few pista slices on the top and bake.
2. Elaichi badam
Put 10-12 badam (almonds) and one cardamom in a grinder. Make a fine powder use this to flavour you Nankhatai.
You can use badam slices on the top for garnish.
While making the dough add a 1/4 th teaspoon of vanilla extract and tuti fruti.
Use coco powder along with all dry ingredients in dough.
