Jo @thesavvygourmand loves food and travel.  Good food is not always sweet or from a restaurant.  Jo, enjoyed making these homemade ginger garlic Szechuan style green bean and hopefully will be sharing recipe on her new website, which is in development and is soon to be completed.
I enjoyed developing Jo's interview, but learned the hard way that it was not me, but Instagram (yes they have a character limit if you did not know). Therefore, here are last two questions from Jo's interview last Friday 😃
Taste Explorers:  Suggest others give what food/drink show or movie a chance?
Jo:  I don’t think it’s on anymore sadly, but Michael Voltaggio had a show on the Travel Channel called Breaking Borders that was fantastic!  He and journalist Mariana van Zeller traveled around the world to places that had seen conflict in the recent or distant past like Belfast, Kashmir, Rwanda and the mother of all conflicts, Jerusalem.  They’d show the different sides of the conflict, the way the different sides lived during the conflict and now, and then bring parties from both sides together for a meal and see what happened.  Most of the meals were fairly friendly and some were filled with tension but the meal often showed them that they had many things in common.

Asiago Roasted Garlic Cauliflower Soup

4 cups cauliflower
1 tablespoon oil
1/8 teaspoon salt
¼ teaspoon pepper
2 cloves garlic
½ cup scallions
1 tablespoon thyme
4 cups broth
½ cup reduced-fat asiago
1 tablespoon lemon juice

FOR THE SOUP:
Toss the cauliflower in the oil, salt and pepper and arrange in a single layer on a baking sheet.

Cut the top 1/4 off the heads of garlic, drizzle the oil on top, wrap in foil and place on the baking sheet along with the cauliflower.

Roast in a preheated 425F/220C oven until the cauliflower is tender and lightly golden brown to a little charred, about 20-30 minutes, mixing the cauliflower half way through.

Heat the oil in a large sauce pan over medium-high heat, add the scallions and cook until tender, about 3-5 minutes.

Add the thyme and cook until fragrant, about a minute.

Add the broth, roasted cauliflower and garlic, bring to a boil, reduce the heat and simmer for 10 minutes before pureeing with a stick blender, in a blender or in a food processor.

Mix in the lemon and asiago and heat until the cheese melts into the soup, about a minute.

Makes 3 servings

Each serving provides:
~1 ounce protein
3 green
1 healthy fat
3 condiments
