👩🍳 I spent a little more time this week cooking and REALLY enjoyed it. I mainly made some new snacks for Raffy, having written a blog this week about #salt and realising that I’m desperately in need of some lower salt snacks to offer him.
👀 Look out for my blog on salt on Monday and also my no-salt baby recipes in the next few weeks too.
📝 For now, however, here are some of the meals I made Raffy this week!
⚖️Some may be a little less balanced than usual, but I usually try and balance Raffy’s food groups over the day, not just one meal (veggies, carbs, protein, dairy/alternatives)
❓Also, some people have asked when I’ve had time to cook and I really don’t usually, but Raffy has started taking a slightly longer nap in the day. Otherwise it’s when he’s in bed!
1.) Homegrown tomato and roasted pepper soup with homemade cheesy croutons and some chickpeas
2.) Pancake with scrambled egg mixed with tomatoes, spinach and chives and kiwi fingers
3.) Homemade butternut squash curry with chilli, mixed rice and natural yogurt
4.) Leftover mashed up fish cake with a corn on the cob, broccoli and a boiled egg
5.) Corn in the cob with cucumber fingers and broccoli served with homemade hummus (see my recipe in link in bio - Raffy loves this hummus, thankfully)
6.) My favourite dish as it’s so quick and easy. English muffin pizzas with a little tomato purée and topped with veggies, cheese and mixed herbs!
