When I told the husband I'll be making French toast for breakfast, he quietly said he'd be having cereal! Haha.
Well, different strokes for different folks! I love this! Mommy used to make these for us, Bombay toast we called them. That version had a bit of spice in it.
This is French toast with cherry compote.
How: for the toast, dunk some bread in a whipped up mixture of 2 eggs, a quarter cup of milk, 1 tsp of sugar and salt to taste. Fry in some butter till golden brown. You could add cinnamon if you like, to the batter.
Don't be fooled by the fancy name, cherry compote is easy to whip up. Heat up half a cup of cherries (stone removed) in a sauce pan with some water and two tsps brown sugar. Add a dash of lemon juice and brandy if you'd like. I didn't have brandy, so I used bourbon (lol, what a cheat!). Heat for 10 min till you get a sauce like consistency. Let it cool, and then drizzle on the toast.
