After the feedback from my Beauty of Blood Sugar Balancing crew, I’m coining my granola squares the game changing granola squares! I knew people would love them as much as I do, not only because they are delicious, but so satiating! It’s basically the only snack I need to pack when I travel. Bringing a couple this weekend in my yoga retreat to kick off teacher training! Recipe below!
PROTEIN GRANOLA SQUARES
1.5 cup nuts + seeds (think equal parts pumpkin seeds, sunflower seeds, almonds, hemp seeds etc).
1/2 cup shredded coconut flakes
2 teaspoons cinnamon
2 tablespoons protein powder of choice
1/2 teaspoon sea salt
1/2 cup nut butter of choice
1/3 cup coconut nectar (honey would work too)
1/2 cup melted coconut oil
1 egg, beaten (or 2 egg yolks)
1 teaspoon vanilla
Preheat oven to 350 degrees. Line an 8x8 baking dish with parchment paper.
Place nuts/seeds, and coconut flakes in a food processor until finely chopped. Transfer to a large bowl. Add protein powder, sea salt and cinnamon. Stir to combine.
In a separate bowl, add nut butter, coconut nectar, and coconut oil. Whisk to blend. Add egg and whisk again.
Incorporate wet mixture into dry and stir until sticky batter is formed. Transfer to baking dish and press firmly until evenly distributed.
Bake 30 minutes, or until edges are golden brown, turning halfway to ensure even cooking.
Allow to completely cool before slicing into squares. I even suggestion transferring to fridge before slicing so coconut oil "hardens" and keeps everything held together!
