Watermelon and Feta
A healthy, nourishing simple-to-make Watermelon and Feta Salad. There are many versions of this refreshing, hydrating salad which is perfect for summer days. This recipe was from many years ago when I went to Palestine. I love adding in the herbs for the extra dimension of flavour and not only to perfume the salad but the medicinal properties the herbs have.
Mint- Good for digestion
Oregano and thyme - Antibacterial and antiseptic properties assist in healing skin issues like acne
Basil- lowers high blood pressure
2 tbsp olive oil
1 teaspoon Himalayan salt
1/2 teaspoon freshly ground black pepper
1/4 cup red onion, thinly sliced
6 cups freshly cut watermelon
1/4 cup feta cheese
Fresh cut herbs such as mint, thyme, basil, oregano
4 lime or lemon wedges
In a large bowl pour in the olive oil. Add the salt, pepper and then the red onions. Mix well.
Add in the watermelon then the feta. Gently toss.
Cut the fresh herbs directly on top of the salad.
Squeeze fresh limes on top.
Serve immediately or keep chilled until serving.
