Soup when it’s hot out... YES or NO? I was going to develop a cold soup like gazpacho recipe, but then realized cold soup is like men with nipples. I don’t fully understand whyyyyyy LOL! Other than little gazpacho shooters for a party or something, I’m not about to help myself to a bowl RN. I always like it H-O-T!! Tonight I’m trying some new @bonafideprovisions bone broth chicken soup and it’s LIfE right now...call me a freak if you want. 😊️

(Makes 10 latkes, approx. 5 servings)
Ingredients
2 medium zucchini, grated (approx. 3 cups)
1 tsp salt, divided
2 Tbsp grated onions
2 large eggs
2 Tbsp coconut flour
1/2 tsp garlic powder
1/2 cup coconut oil

Instructions:
1. Place grated zucchini in a colander, sprinkle with 1/2 tsp salt. Let sit for 30 mins draining over a bowl to release water. Drain zucchini by tossing and transferring to a cloth or nut milk bag and ring out as much water as possible!
2. Place zucchini in a large bowl and add onions (dry these quickly too), add remaining salt, eggs, coconut flour, & garlic powder. Mix to combine.
3. In a large skillet over medium heat, heat coconut oil.
4. Form the latke batter into ten 1-inch balls and add to skillet (don't overload it, do it in batches). Gently flatten them with the back of a spoon and fry for approx. 3 mins on each side. Remove and add to a cooling rack, repeat until finished. Sere immediately and optionally add coconut yogurt or sauce of choice.

Hooray for Nightshades!! Hahaha... No seriously, the autoimmune community tends to avoid these like the plague bc of inflammation, but in moderation the “goods” that come along with tomatoes are so powerful if you can tolerate them and especially in the summer (which is why they’re in season, duh)! ——
Eating tomatoes on a day you’re out in the sun will help protect that beautiful skin. In fact, my friend @rosemaryfotheringham has a whole eBook about eating for sun protection and it’s fascinating. ——
I’m pretty picky with tomatoes, ever since I was a kid... it’s a texture thing hahaha, but do love cooked ones and love treating myself to dishes with them in the summer when they’re fresh. @healthylittlepeach ‘s tomato basil chicken is on my list (link in stories) and she is slaying it on her @whole30recipes takeover RN!!

“It’s genetics” - I’ve heard this used as an excuse for illness and other symptoms, and then worse... as an excuse to do nothing about it, sit back and keep up with the same habits that activated “it” (whatever it is) in the first place. ——
We all carry dominant and recessive traits, and aside from the appearance we are born with like eye and hair color... our food/diet, lifestyle choices and environment turns them on OR off! “It’s EPIGENETICS”. Of course there’s plenty we are just dealt, luck of the draw-style but there’s plenty we can change by the choices we make all day long. The trick is, we are all so unique that a one-size fits all diet or workout program often fails long-term and frustrates the hell out of us... we throw in the towel and blame Mom and Dad... We’ve all been there. ——
But if your desire to improve, grow, and support your body to feel its best... while practicing self-love and acceptance, you can!! It takes some patience, open-mindedness, working on behaviors (it’s not all about willpower, or you’d be golden already, trust me), and some trial and error. It usually requires help (which is okay to ask for, ppl!) to find what works best for you and how to even go about figuring that out in the first place. Another “it’s too hot to cook” inspired meal! Easy, light and tasty AF: GRILLED SHRIMP WITH SPINACH PESTO ZOODLES (SERVES 2)
Ingredients:
~ 8 oz. fresh or frozen (and thawed) wild-caught shrimp
~ Handful of fresh organic basil leaves (stems removed)
~ 2 cups fresh organic baby spinach
~ 1 garlic clove, minced
~ Juice from ½ lemon (reserve other half for garnish)
~ Zest of 1 lemon
~ ¼ cup extra virgin olive oil
~ 2 medium-large zucchinis
~ 2 tsp coconut oil or spritzes of coconut oil spray (may also use avocado oil)
~ Seasonings: sea salt, pepper, paprika
*Optional: nutritional yeast (in place of parmesan for pesto) ----
Directions:
1. Peel and de-vein shrimp.
2. In a bowl, combine shrimp with a sprinkle of sea salt, pepper, paprika and lemon zest. Mix well so shrimp is well-covered. Set aside.
3. Using a spiralizer, chop both ends of zucchinis and spiral into “spaghetti.” Set aside.
4. Make the pesto by combining spinach, basil, lemon juice, minced garlic, and nutritional yeast (if using) – in a food processor. Add salt and pepper as desired. Slowly pour extra virgin olive oil until desired consistency is reached (it should be loose enough to toss with your zoodles). Taste and adjust seasonings to your liking.
5. Add 2 tablespoons of pesto to the mixing bowl of zoodles and toss well. Add more pesto if needed to cover zoodles; save leftover pesto, if any, for use during the week.
6. Heat a cast iron skillet or grill pan over medium-high heat. Add a small amount of coconut oil if needed to prevent shrimp from sticking.
7. Place shrimp on pan and cook for 2 minutes on each side, until pink. Do not overcook.
8. Plate the zoodles. Top with shrimp. Garnish with lemon slices. Serve immediately.

For those of you with me, it's going to be SUPER tempting to get it all in today, but try your best not to over-do it. Remember, it's JUST 30 days, seriously... set yourself up for success right from the start, don't start it with a hangover... and be kind to your body. ----

🙋🏻‍♀️I felt like I was using food as comfort and a way to ignore my stress and anxiety.
🙋🏻‍♀️ My digestion and health in general felt stuck, stagnant, and slow and it’s been translating to/from other areas of my life. And yes that includes not fitting into half of my last year summer clothes!
🙋🏻‍♀️I haven’t been practicing mindfulness as much as I once was... with eating and self-care.

We all go through ups and downs, it’s nothing to beat ourselves up about, though we tend to. Knowing how to get back to Center, when we feel ready to, is important. For me, as an #abstainer, resets like Whoke30 or #AIP are used as tools to help me strengthen habits, and work in making me feel better and better and pushing me farther and farther in my own health journey. Know yourself, honor it, and be kind.
