Home and craving alllll of the veggies so our fave deliciously simple, DIY, chicken burrito bowls = be happening up in here!

Chicken (or protein of choice) is sprinkled with your fave Mexican seasoning (I used @spicetradingco 's Holy Chili Guacamole mix) then pan seared then finished with a cheeky squeeze of lime (tonight I used ground chicken and threw in a bunch of spinach and sauteed some mushrooms too), and serve on a mountain of light a fluffy cilantro-lime cauliflower rice then top it all off with a light, fresh, tomato salsa, some creamy, dreamy sliced avocado, a drizzle of the most amazing jalapeno-cilantro-lime crema and finish it with a few dashes of your fave hot sauce and a handful of plantain (or tortilla) chips on the side. ๐Ÿ˜โค๏ธ๐Ÿ‘Œ๐Ÿป

๐Ÿ–ค Some @gimmegrams roasted teriyaki seaweed snacks + a sprinkling of black sesame seeds + @extraordinary.foods pimp my salad - sea superfood salad sprinkle (which I got on super sale at @sprout_market )
๐Ÿ’šFinished with a drizzle of @primalkitchenfoods avocado oil mayo + a touch of my healthy, homemade teriyaki BBQ sauce๐Ÿ‘Œ๐Ÿป

Remember, if salmon isn't your jam you could easily sub in your protein of choice - chicken, pork, steak, beef or even just a couple of soft boiled eggs would go very nicely here too ๐Ÿ˜˜

I'm not sure if it's the jetlag or if I'm actually getting sick, because I am not feeling good today. .
Head = thumping.

Throat = scratching

Joints = aching

And Im craving some serious comfort food and nothing says comfort food like a big ol' plate of spaghetti bolognese am I right?! ๐Ÿ๐Ÿ˜‹๐Ÿ‘Œ๐Ÿป

Here's how I make mine if you care to join me;
.

๐Ÿ For the bolognese;
.
๐Ÿฎ 500 g (1lb) Ground meat (tonight I used chicken but your fave protein source will work) cooked in @fourthandheart ghee + pink salt
๐Ÿ„ 1/2 cup Mushrooms
๐Ÿ’› 4 larg garlic cloves, crushed
๐ŸŒถ A generous pinch of red pepper flakes
โœจ Salt & pepper to taste

Once the meat is cooked stir in -
.
๐Ÿ… 1 can diced tomatoes + 2 Tbsp of tomato paste
๐Ÿถ 1 tsp of @jomeisfinefoods Balsamic, vinegar
โฃ 1 @sandhurstfinefoodsau red pepper, finely chopped
๐Ÿƒ A few fresh basil leaves roughly chopped +
๐Ÿฅ˜ 1/4 cup of chicken broth
.
Let it all simmer until nicely reduced and served on a mountain of zucchini noodles (or regular spaghetti, a baked potato or even just some wilted greens) ๐Ÿ‘Œ๐Ÿป
.
Then I drizzled with with a zesty avocado ranch dressing that I made with ;

๐Ÿฅ‘ 1/2 a mashed avocado
๐Ÿ’›1 Tablespoon of @primalkitchenfoods paleo ranch dressing ๐Ÿง€1 teaspoon of @extraordinary.foods cashew Parmesan (sub nutritional yeast to get that zesty, cheesy flavor)

Oh my word, that dressing!!!!! I seriously want to take a bath in that stuff! Sooooo good! ๐Ÿ˜‹โค๏ธ๐Ÿ™Œ๐Ÿป .
Then to serve I finished it with a generous pinch of pink salt, some freshly ground black pepper, a sprig of fresh basil and some extra chili flakes

So simple to through together but sooooooo flavorful it's kind of ridiculous!!!!

A couple of years ago they opened @hummusbaruk in Golders Green, it was an instant success, booked up weeks in advance - and is still packed every night to this day. Luckily for us (and you) they decided to open a second branch, Hummus Bar Express in Hendon last week. With an 'order at the bar only' policy, they don't take bookings, but don't let this stop you. We went tonight to try it out for the first time. For starters we went for the Beef Carpaccio and the Chorizo Sausage. They do the Carpaccio in the Golders Green branch, so we knew it would be good (it was). The Chorizo was actually outstanding, a new dish for them - homemade, and served on a bed of caramelised sweet onions and a chimichurri drizzle, along side mustard pickle cabbage and red onions. They actually have some other Chorizo dishes in the mains section - check out their Chorizo in a bun, or the Dirty Chorizo (Similar to their dirty hybrid epic feast over in GG) Iโ€™ll be going back for those soon! Onto the second part of our smoked meat fest from @andrewkrausz (Blue Smoke) this evening... this really was the main event. We have smoked short rib and smoked brisket... whoโ€™s drooling ? First weekend in December is ready to kick my butt with all the activities. Just getting myself properly pumped up #scrambledeggs style. ๐Ÿ˜Ž Give me all the veggies and #sriracha please. ๐Ÿ’ช๐Ÿฝ

A huge and filling breakfast is kind of key to the way I fit in exercise, late lunch + all the things during nap time. This one is my favorite!
โ€ข 2 whole eggs
โ€ข 1/2 tablespoon butter
โ€ข 2 cups fresh spinach
โ€ข 2 tablespoons cheddar
โ€ข 1 tortilla (mine are low carb)
โ€ข salsa
.
Heat the butter over medium heat. Add the spinach until just wilted, then add the eggs and scramble until everything is cooked through. Heat the tortilla with the cheese sprinkled on top until the cheese is just starting to melt. Top with the eggs and spinach, then load up with salsa!
.

Sweet Potato
Asparagus
Cherry tomatoes
Zucchini
Red onion
Shallots (Diced up - throw into Baking Dish - dash of olive oil and salt and pepper - placed in the oven for about 15mins until starting to cook) .
4 salmon fillets
Lemon .
Moroccan Spices from the @spicetradingco (They are amazing) (In a bag or bowl place in the salmon, mix in the seasoning and squeeze the lemon, make sure to coat all the salmon with the mixture)
Place salmon onto the roasting vegetables and place back into the oven for around 20/25 mins until salmon is cooked.

Meanwhile - cook 1/2 cup cous cous, cut up some fresh coriander, feta and measure out 1/4 cup flaked almonds. .
Once fish is cooked gently take off Vegetable and ensure they are cooked - mix in your cooked cous cous, almonds coriander and broken feta. Mix well to combine. .
Serve on the bottom of the plate and place salmon on the top!

I didnโ€™t grow up on brussels sprouts. David introduced me to them many years ago. Although his idea of brussels sprouts come from the frozen food section of the grocery store with some kind with a strange buttery sauce on them. Iโ€™m a little late to the brussels sprouts bandwagon because I had to find a way to overcome my fear of the way he prefers them. Trying brussels sprouts fresh made all the difference in the world. A lot of people donโ€™t like brussels sprouts, because of their sulfur flavor. What many do not know is that the bitter sulfur flavor comes from overcooking the brussels sprouts. In their raw form, brussels sprouts are not bitter at all! Raw, shredded brussels sprouts have a mildly sweet taste like cabbage, with a wonderful crunch.

โœณ๏ธ 1 kilo (2.2lbs) of ground meat - grass fed beef, turkey, chicken, pork or even salmon would work too.

โ‡๏ธShape into 8 patties, pop a thumb print in the center help ensure even cooking & maintain a nice shape

โ‡๏ธ Cook in a little coconut oil (or fat of choice) for 2-3 minutes each side, until cooked through or to your liking and you're done. ๐Ÿ‘Œ๐Ÿป

If you want to freeze any leftovers just allow to cool completely before freezing. Then simply remove from the freezer and reheat by your preferred method, boom - done ๐Ÿ‘Š๐Ÿป

On the weekend we had a little Mexican fiesta with the help of my good friend @perrysplate Big Book of Paleo Slow cooking to celebrate my Dads birthday !

I made the easy chicken tacos (pg 103 for those playing a long at home), they were a huge & I mean HOOYUGE HIT!

We ate until we were stuffed & then a little bit more because, yum! And let me tell you, my little lady loved them so much, girlfriend went back for a fourth helping so you know they were good! ๐Ÿ‘

Anyway . . . fast forward to today . . . .
Never in my life have I been more thankful for leftovers!
