These egg muffins are so simple and a new go to for me. I love having them ready to go in the morning with my superfoods. With this recipe, I didn't really measure anything.
In a pan, sauté some diced onions and add about a bags worth of spinach(YUP!). The spinach cooks down so much that you'll need it all for 12 muffins.
In a separate bowl, scramble 12 eggs(of egg whites), Italian seasoning, and feta cheese. Once spinach is all cooked, take a tbsp of spinach/onion combo into muffin tin. Top with eggs.
Bake at 375 for 14-17 minutes.
