My entry for burger of the day: an aged cheddar bacon burger. This is another burger made from my freshly ground short rib and sirloin cooked sous-vide at 131°F for one hour and finished in some bacon fat. Includes Claussen pickles, vacuum compressed tomato, red onion, lettuce, secret sauce, and, of course, perfectly melting aged cheddar cheese and homemade bacon. Paired with Firestone Walker Pivo and kettle cooked potato chips. Yum!
