How do people live without leftovers? One of the easiest and most economical ways to โ€œmeal prepโ€ is just to make a little extra on Your Sunday/Monday and have it for lunch the next day or โ€œrepurposeโ€ it into something new the next day (or two days! ๐Ÿ˜‚) Yes, this is chili again ๐Ÿ˜‚. But it saved me this last week when I needed quick lunches. Plus I even turned it into chili tacos by putting it in some warmed corn tortillas and a few other toppings. Iโ€™m not the most gourmet chef, but we eat healthy whole foods and do our best to minimize waste. ๐Ÿ™Œ Whatโ€™s your go to?

Delishi is my fav๐Ÿ’• On another note, I would like to take a minute to talk about something that's been on my mind a lot lately. Most of you that know me know how much I love health and fitness and know that it's a big part of my life. However, many of you don't know where my fitness journey started. My fitness journey started in 2012. I started off doing light workouts a few days a week and only cut my calorie intake down a tad. Overtime, my workouts became longer and harder and my calorie intake became much lower. It came to a point where I wasn't eating much at all (like 500 calories a day) and I was working out around 3-4 hours a day. I lost a lot of weight and was very unhealthy. Most would look at me now and think that I have recovered, but truth be told I don't think I ever fully recovered. Since then, I've still had that mind set that a smaller version of myself is a better version. But that is just not true. Smaller does not mean healthier. I used to eat things like this and get upset because I thought it would automatically make me gain weight and make me unhealthy, but that is also not true.. I am no longer going to "diet" to look a certain way. Yes, I do believe that you should eat healthy and workout to maintain a healthy body, but I also believe that you can have anything in moderation. It's okay to eat stuff like this from time to time. We were not put on this earth to shrink ourselves and we are beautiful exactly how we are โค
