The star of the Sunday Lunch today. Fiddle head fern with Chalta or Outenga (Elephant Apple). An Assamese dish that I loved when I had this at a small Mishing Dhaba on the outskirts of Dibrugarh. Very simple to make and yet so flavourful!
Both Fiddle head fern or Dheki Saag as we call it and Elephant Apple is very good for your health (Especially if you have blood pressure and Diabetes). The Elephant Apple is used extensively in Assamese cuisine, and I have come to love the fruit. We Bengalis only use it for a sweet and tangy chutney, to be had at the end of the meal. However Assamese cuisine uses it in Dals, Fish and and in a lot of other dishes.
Here's the easy peasy recipe :
Cut the Fiddle head fern finely and wash in plenty more for water. I have taken a bunch here. Also peel an elephant apple and boil the inner flesh, cut in straps or cubes for about 15 minutes or till soft.
Add two sliced onions in hot mustard oil in a wok. You may add a tempering of mustard seeds and red chillies in the oil, before adding the greens. Sauté well. Add in the Elephant Apple, sone salt and turmeric and simmer till all done and the water is absorbed. Serve with hot rice.
