Inspired by Dutch Poffertjes (small pancakes) that I didn’t get to try! Can I just say so many foods and not enough time? The struggles of a foodie. 😩 I know you guys feel me on this! So to skip feeling FOMO, I whipped these babies up! This is my favorite go to pancake recipe that’s SO simple literally anybody could do it. (I mean it this time @nhat_85!)
Sweet potato pancakes: 1 medium sweet potato and 2 eggs. I added @rebbl’s golden milk for a hint of turmeric and sunshine! Other optional add ins: cinnamon, vanilla extract, superfood powders, & mashed banana. Peel your potato and poke holes with a fork/knife. Splash water on it and heat it in the microwave for about 5-7 min. until you can easily poke a fork through it. Mix in 2 eggs and create your batter! Try to mash up all the sp chunks the best you can! Add any additional ingredients to your liking and cook like normal pancakes! I used @traderjoes coconut oil to cook with.
Toppings: chia seeds, unsweetened coconut chips, @purely_elizabeth pumpkin cinnamon granola, @crazyrichardspb chunky pb, and bee pollen.
