One evening in Reykjavik our tour guide Karl took us to an old tavern. Grinning, he ordered something called ‘kæst skata’. In English that means fermented skate. In Aussie that means rotten stingray. When the stingray arrived we were all immediately slapped in the face by the pungent stench of rancid fish guts and ammonia. As we watched in horror, Karl joyfully ate the beige mush and explained that his grandfather used to make this dish for him every Christmas. I eventually got up the courage to try some. As I chewed, a sharp heat engulfed my mouth and nose. My sinusitis was cured, but at what cost? Imagine getting a fish, smearing it in blue cheese, pissing on it, and then leaving it behind a radiator for a month. That’s what it tasted like. The next day I had to wash my hair and burn my clothes.
