If I had to choose one ethnic cuisine to eat for the rest of my life, I think I'd pick Italian. 🇮🇹Garlic, onion, oregano, basil, balsamic vinegar, olives, sun-dried tomatoes, eggplant, lemon...all signature Italian ingredients go so well together on you name it--pizzas, salads, pastas, and even married together in a roast. Pair that with a squeeze of lemon, a glass of vino, cooking and enjoying a meal with your favorite people, lots of laughs, and life is good. 🍕🍝🥗🍅🍆🌅🌱💫✨

RECIPE BELOW // Vanilla Energy Bites⠀

Energy bites are a great nut-free, meat-free snack option when jerky just isn't doing it for you. They're sweet but not quite dessert-like, so you can feel good eating them any time of day. Plus, they're super easy to make and great to keep on-hand in the fridge.⠀

🍎 3 cups dried apple rings⠀
🍎 1 cup dried apricots⠀
🍎 2 whole vanilla beans, sliced open lengthwise, seeds scraped and reserved⠀
🍎 1 lemon, zested, 1 tsp reserved⠀
🍎 ½ lemon, juiced⠀
🍎 ¼ cup coconut oil⠀
🍎 ½ cup finely shredded coconut⠀
🍎 A pinch of sea salt⠀

👉 Add the apple rings, apricots, vanilla bean seeds, lemon juice, lemon zest (reserving 1 teaspoon for later), and coconut oil to a food processor. Process on high until thoroughly combined and sticky, about 1-2 minutes. Set aside.⠀
👉 In a small bowl, combine the shredded coconut, sea salt, and reserved lemon zest and stir to combine.⠀
👉 Using your hands, form the apple mixture into small balls, about the size of 2 tablespoons, and roll through the coconut mixture before placing on a plate. Once all of your "bites" are formed, place them in the refrigerator for 20 minutes to harden. Keep refrigerated before serving, or they will melt.⠀

Breakfast goals am I right?! REAL TALK:: I have gotten a bit of push back from the plant-based community whenever I share pictures featuring eggs and here's what I have to say about it:
No eggs are not plant-based, and yes there is a very ugly industry here in America associated with the chicken industry that I whole-heartedly am against. Yet I think it is important to validate farmers who are raising hens and selling eggs in a responsible, ethical, and eco-friendly manner. I source my eggs locally and interact with the farmer 👨‍🌾 when I make a purchase so that I can ask questions to soothe my curiosity. When I eat 100% plant-based, I don't feel my absolute best. Choosing to reincorporate eggs was based on my ability to listen to my body and honor its intuition. I still abstain from eating all other animal products as a way of casting my vote against factory farming and cruelty.
In a world that can seem so filled with hate, it's important to not cast judgement on those who live their lives differently than our own. Ultimately, each body is different and thus requires different approaches to nutrition. So, until I am able to find a way to eat 100% plant-based and still feel my absolute best, I am going to continue to keep the occasional egg in my diet. With that being said, I am going to ensure that I am making the absolute best/informed decision I can when purchasing eggs to make sure that I am not supporting an industry fueled by cruelty and greed.

BAKED JACKFRUIT ZUCCHINI TAQUITOS!! This was my first experience using Jack fruit, and I'm a BIG fan👌🏻It has the same texture as shredded chicken and gave these flautas great bulk & texture!! Ton of fiber and low-fat too! 💯 ***Full disclosure: I had to research the difference between Flautas & Taquitos so I knew what to call these babies! 🤷🏻‍♀️ Both are typically fried, and fillings are interchangeably the same.....SO the difference? FLAUTAS= longer and thinner using burrito sized flour tortillas. TAQUITOS= shorter versions using smaller flour or corn tortillas! 👌🏻There you go! 😆 Info from: @thespruceeats
ANYWAY, I meal prepped them last weekend and must say I looked forward to having them erryday... sad they are all gone now 😢

I also made an epic greek yogurt based jalapeño cilantro sauce using Melinda's jalapeño hot sauce @heatandflavor 🌶💚🔥#recommended -------------------------------------------------
BAKED JACKFRUIT ZUCCHINI TAQUITOS
1. Heat 1 Tbl. Coconut oil and 1 Tbl. Ghee @fourthandheart in large skillet
2. Add 1/2 red onion diced & 1/2 red bell pepper diced; cook 5 mins
3. Add 2 tsp. minced garlic + seasonings; I used garlic powder, cumin, coriander, and cayenne pepper
4. Grate 4 large zucchinis and squeeze out as much moisture as possible using towels or paper towels; add all zucchini to the mixture
5. Drain and shred can of Jack Fruit; add to mixture
6. Grate as much cheese as you would like; I used 1/2 Cup of grass-fed sharp Cheddar cheese; add to mixture and then then stir until combined and turn heat off.
7. Place all mixture in a strainer over a bowl for an hour to get all liquid out, and cool completely.
8. Once cooled, roll in corn tortillas and place swam-side down on a greased baking pan.
9. Add cheese top of Taquitos if desired, cover with foil, and bake 20 mins
10. Bake uncovered 15-20 more minutes until crispy!! 🙌🏻🙌🏻🙌🏻 GREEK YOGURT JALAPEÑO CILANTRO SAUCE:
In a small mixing bowl whisk
1. 2 Tbl. Greek yogurt; I use 0%

2. 2 tsp. Lime juice
3. Small handful of cilantro
4. 1-2 tsp. Jalapeño pepper sauce

5. Pink salt/pepper
