Everyone else was gone for dinner, so I didn’t feel like cooking too much. I had the last of the leftover roast with tomatoes, avocado, fresh basil, and balsamic vinegar. Plus, scrambled eggs and leftover green beans.

**Pumpkin Pie Spiced Almond Butter Cups ** These little cups are super simple and they're great for entertaining, for kids, for gifts or just for yourself. They're chocolatey with warming spices and a smooth, creamy center. Nutrient dense AND tasty, a win win🤗

🍫1/2 C Smooth almond butter.
🍫1 1/2 Tbsp maple syrup.
🍫1 Tsp vanilla extract.
🍫1 1/2 Tsp pumpkin pie spice.
🍫Pinch sea salt
🍫200 Grams 70% dark chocolate.
🍫1 Tbsp coconut oil
🍫Assorted nuts and dried fruit. --------------
1. In a small bowl mix the almond butter, maple syrup, vanilla, pumpkin pie spice and sea salt until smooth. Cover and place into the freezer. (This will make it easier to shape them.)
2. Chop the nuts and dried fruit if using and set aside.
3. In a bain marie, melt the chocolate and the coconut oil on a low heat. While it is melting, take out the almond butter mixture and take roughly about 1 tablespoon full and shape it into a ball and then press to flatten it into a disc shape. Make 12 and set aside.
4. Line a muffin tray with 12 muffin cups. Pour 2 teaspoons of the melted chocolate into the bottom and spread it 1/2 an inch up the sides of the cup, making sure the entire bottom is covered. Do this for all 12 cups. Bang the muffin tin on the counter to help make an even layer of chocolate. Next place 1 almond butter disc on top. Repeat this for all 12. Pour another 2-3 teaspoons of chocolate overtop until covered.
5. Add the toppings of choice and place in the fridge to set for 20 minutes. Remove from the fridge and let sit at room temperature for 10 minutes before eating. They can be wrapped and frozen for up to one month. Enjoy!
