Choc Peppermint Slices by @the_smallseed_

➕➕INGREDIENTS
Base:
200g Roasted Almonds
40g raw cacao powder
175g Medjool dates

Filling:
450g raw cashews (soaked overnight)
1/4 C + 2Tbls Almond milk
75g Cacao butter
190ml rice malt syrup
10 drops of food grade peppermint oil
.
⏩⏩Instructions

Place all base ingredients into a blender and combine untill mixture sticks between fingers when pressed together. Place baking paper into tin I used a 27cm by 18cm rectangular tin..press mixture down with your fingers.
Place in the freezer whilst you make the filling.

Rinse and drain cashews.
Place cacao butter into a ban Marie and heat to 38 deg. Take off heat, if some of the butter is still solid swirl it around and it should melt.
Place cashews and all the other ingredients into a high-speed blender and combine until smooth and creamy.
Pour over base and place in freezer for approx 4-6hrs or until set. Once set, make the chocolate.

For the chocolate layer:
1 C coconut oil -melted
3/4 C raw cacao powder (sieved)
1/2 C pure Maple syrup
.
⏩⏩Instructions

Place all ingredients into bowl and whisk, until smooth.
Pour over the mint layer, smooth to the edges and place back in the freezer for a couple of hours, slice and enjoy!
Store in an airtight container in the freezer.

Giant Vegan Chocolate Biscuits by @daisy_scoopwholefoods

➕➕INGREDIENTS
Dry ingredients:
1 1/2 cup teff flour
1 cup chestnut flour
1 cup desiccated coconut
3/4 cup beetroot & cacao elixir
1 tbsp ground flaxseed
1/2 tsp bi carb soda
1/4 tsp fine Himalayan salt

Wet ingredients:
1/2 cup + 1 tbsp coconut oil
1/4 cup maple syrup
3 tbsp milk of your choice
.
⏩⏩Instructions

Preheat oven to 175C. Mix dry ingredients in one bowl and wet in another (except the milk), then add wet ingredients to dry and mix well to combine, adding the coconut milk. Roll into balls then flatten into desired shape. I made giant cookies but you can make any shape you like, they won't change shape during cooking just adjust cooking time. Place on lined baking tray and cook for 20 mins. Allow to cool on baking tray before transferring to wire rack to complete cooling.

Icing:
To make the icing simply mix 1/2 cup coconut butter, 2 tbsp maple syrup, 2 tbsp coconut oil, 2 tbsp coconut milk, 1/2 tsp beetroot powder and 1/4 tsp vanilla paste. Melt on low heat until combined using a whisk. Add a little more coconut milk if needed. Drizzle over your biscuits as you like.

Crust:
6 big medjool dates
1/4 c (35 g) almonds
2 tbsp sunflower seeds
2 tbsp flax seeds
1 tbsp coconut oil

Chocolate mousse:
1 ripe banana
1/2 ripe avocado
2-3 tbsp cacao powder
2 tbsp maple syrup
2 tbsp melted coconut oil
.
Berries for topping
.
⏩⏩Instructions

Put all the ingredients for the crust in a food processor and pulse until everything is well combined or it forms a ball. Press the crust mixture into the bottom of a small tart pan.
Blend all the ingredients for the chocolate mousse until completely smooth. Pour the filling into the crust, top it of with your favorite berries and chill for at least one hour. Enjoy!

Chia Layer
3 tbsp chia seeds
½ tsp pitaya powder
1 tsp maple syrup
½ cup unsweetened almond milk
Strawberry/Raspberry Layer
4-5 fresh strawberries
4-5 fresh raspberries
¼ cup Yoso Unsweetened Coconut Yogurt
A few strawberries or raspberries for topping

⏩⏩Instructions

Mix the chia seeds, almond milk, maple syrup and pitaya powder in a bowl and let sit until it gets thick.
Blend the fresh strawberries, raspberries and yogurt until smooth and creamy.
In a stemless wine glass layer the chia mixture and the strawberry raspberry yogurt mix until the glass is full and top it all off with the fresh fruit. Enjoy!

Pumpkin Spice Bounty Bars by @wildblend

➕➕INGREDIENTS
3/4 cup coconut cream
2-3 Tbsp maple syrup
½ cup pumpkin puree
1 tsp pumpkin spice
2 cups desiccated coconut
¼ tsp vanilla powder
½ tsp turmeric (optional, for colour)

For the chocolate coating:
¾ cup unrefined coconut oil, melted
2 Tbsp cacao butter, melted
¼ cup maple syrup
¾ cup cacao powder
.
⏩⏩Instructions

1. For the bars, combine coconut cream, pumpkin puree, turmeric, pumpkin spice, vanilla and rice malt syrup in a large mixing bowl. Mix well until everything is combined.
2. Once combined, fold in desiccated coconut.
3.Press mixture down into a square baking tin lined with parchment paper. Freeze for 3-4 hours or overnight.
4. For the chocolate coating, whisk the ingredients together in a bowl until smooth
5. Once set, cut coconut into bars and individually coat each bar with chocolate.
6. Place in the fridge for 30 minutes to allow the chocolate to set
7. Enjoy!

Sprouts, squash, and, oh my!

Welcome to DAY 2 of Thanksgiving week! When it comes to Thanksgiving sides, I'm all about those jewel-toned veggies! These lovely Brussels sprouts and butternut squash are roasted to perfection and tossed in a WARM BACON POMEGRANATE DRESSING that I can't stop drooling over!

You may be seeing a gazillion pecan pie bar recipes going around! Tis the season?? 🤔😆But I’ve had these on my list of things to make for so long. Finally got around to making them and they are so yum! Perfect dessert for thanksgiving! Recipe below - will post them on the blog too. .

Crust
1 cup coconut flour
1/2 cup coconut oil melted
1/3 cup maple syrup
1/2 tsp vanilla
Filling
1 1/2 cups chopped pecans
1/2 cup maple syrup
1/4 cup coconut oil
1/2 cup coconut sugar
1 tbsp almond flour
2 tsp arrowroot
2 tbsp almond milk
1 tsp Cinnamon
1/2 tsp Vanilla .

Mix all pie crust ingredients in a bowl - place in a parchment lined 8x8 pan. Bake for 8 minutes on 350. Let cool. In the meantime place all the filling ingredients in a sauce pan on medium low. Keep mixing until it boils and becomes thick. Place filling on top of the crust and bake for 20 minutes. Let cool before cutting! .

➕➕INGREDIENTS
1/2 cup egg whites (4 egg whites) (120g)
1/4 cup almond milk (30g)
2 Tbsp chocolate protein powder (20g)
1 tsp cocoa powder
2 tbsp sweetener of choice (to taste) (optional)
2 slices bread (wholemeal, GF)

Toppings
1 tbsp peanut butter, mixed with 1 tsp coconut oil
1 tbsp chocolate chips
.
⏩⏩Instructions

1. In a large baking dish, stir the egg whites, protein powder, cocoa powder, almond milk and sweetener until combined.
2. Place the bread in the egg mixture and let soak for 10 minutes each side, or until all liquid has been soaked up by the bread.
3. Grease and heat a pan on medium heat, and cook the bread until lightly golden brown on each side, about 3-4 minutes per side.
4. Add the peanut butter and coconut oil together in a bowl and microwave for about 30 seconds until smooth and melted. Stir until combined.
Pour the peanut butter over the french toast and sprinkle with chocolate chips and DEVOUR.

These balsamic roasted mushrooms hit the blog today! I make them year round because they are so good and so easy, but they are perfect for your holiday dinner too! Who says you can’t enjoy potato gratin because you are vegan? 🤩 Soy creme tastes amazing with this. And it is such a delicious side for almost any occasion! This one is creamy and a little spicy: Use 1 kg potatoes, 5 dl soy creme, vegan cheese if you like, 1 yellow onion, salt, pepper, paprika, onion/garlic powder and some chili flakes. Layer it and pour the cream over in the end. Put in the oven at 200 degrees celsius for 1 hour. Enjoy! 🥰

1 1/3 cup red onion, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 1/3 cup celery, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 teaspoon Himalayan salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 teaspoon ground black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 clove garlic, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 1/2 cups water + vegetable bouillon⠀⠀⠀⠀⠀⠀⠀⠀⠀

1.) Lay cubed bread out on baking sheets.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2.) Pre-heat oven to 375°F and bake bread for 5 - 10 minutes, until it starts to harden. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3.) When done, remove and scoop into a large bowl. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4.) Sauté onion, celery, salt, pepper and garlic in 1/2 cup water. Once water has cooked off, set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5.) Prepare 2 cups water + vegetable bouillon and set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀
6.) Line a large baking pan with foil or cover with nonstick spray.⠀⠀⠀⠀⠀⠀⠀⠀⠀
7.) Pour 2 cups water and vegetable bouillon mixture over bread and add remaining ingredients.⠀⠀⠀⠀⠀⠀⠀⠀⠀
8.) Mix thoroughly with a spoon. If it’s too wet add more bread or quinoa if it’s too dry add in additional vegetable broth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
9.) Transfer mixture to the prepared pan(s) and cover with foil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
10.) Bake at 375°F for 45 minutes, then remove the covering foil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
11.) Bake for an additional 10-15 minutes, until the top is golden brown and crispy.⠀⠀⠀⠀⠀⠀⠀⠀⠀
