Nothing fancy this morning. Just some left over chicken sausage from yesterday, 2 scrambled eggs & a little Texas Pete!

My 30 Days to Discipline Challenge doesn't officially kick off until next Monday but im trying to get my mind & my body ready for what's about to happen.

If you feel like you're needing a little discipline in your life these days give me a double tap! It's nice to know I'm not the only one.

πŸ“£ I just gotta tell you.... these little suckers right here are mind blowing!

One of my biggest struggles is finding the quick snacks in between meals. That don't have a tone of chemicals & won't make my tummy swell!

I got the meal thing on lock! But in those moments when I'm away from home, running errands or waiting for dinner to finish..... that's when I will mow down a bag of sour cream & onion chips with a quickness! If I don't have a better option.

I know they look like meatballs.... but trust me & try them!

1 cup gluten free oatmeal
1/2 cup almond slivers
1/2 cup flax seed
1 tsp almond extract
1/3 cup honey
3/4 cup peanut butter (the only ingredient in peanut butter should be peanuts!
1 scoop vegan cafe latte shakeology
1 scoop vegan chocolate

Grind oats, flax seed & almond slivers in the blender for 30 seconds, until powder. Mix together with all other ingredients. The mixture will be crumbly but I promise it sticks together. Form into bite size servings with clean hands.

Eat right away, refrigerate what's left.

You can sub whatever flavor shakeology you have for this. Although I'm not sure how strawberry would taste?! πŸ˜‚

These right here get two thumbs up from me! It's hard to find "clean" prepackaged products that don't have a ton of added chemicals.... let alone a product that has ZERO chemicals.

I got these babies at costco. I think they were like $10 for the bag.

Just an fyi if you eat more than one pack your doing it wrong. Tehe! 🀣🀣🀣 I use snacks like this for emergency situation. Not as a new food to sit around & munch on & not as a meal. This is a hangry option so I don't blow all my hard work.

Time for another fresh recipe! This one's good for any hot summer night!

1 half pineapple bowl
1 cup diced pineapple
1 cup diced peppers (any colors)
1 cup diced Roma tomatoes
2 diced pickling cucumbers
β…“ cup chopped cilantro
ΒΌ cup minced onion
5 cloves garlic, pressed
2Β limes, juiced
Salt and Pepper
Optional: tbspΒ diced jalapenos

Mix all the ingredients together in a bowl. Keeps in the fridge for up to four days.

If you want to see the technique for cutting the pinapple bowl just look on youtube. It's really simple.

Okay... first things first! You can't have a Cinco De Mayo party without the guacamole! It's so simple, fast & healthy! πŸ₯‘πŸ₯‘πŸ₯‘Say what?!?! .

2 Ripe Avocado
1 juiced lemmon
1 tsp Himalayan salt
1/4 red onion, diced

Mash it all together & serve with cut up veggies instead of chips. Have what you want without adding inches.

For the last three days I have been seriously craving a five guys cheese burger! The pickles, the lettus, ketchup, mayo & mustard on that grease goodness! Yuuummm!

But that's gonna make me feel like crap & it's not gonna look good in the corner pocket of my bikini..... so today I planned ahead!

Cause ain't nobody got time for that!

Cause eating healthy SHOULD taste good!

This beautiful masterpiece comes together faster than a wait at any drive throug! Or a trip to your local McAlister!

TIP!..... You can get pre cooked salad shrimp at the local market, store it in a glass container & it will last you at least 5 days. Fast easy way to get some extra protien!

Who knew they came in purple?! Do you want to know my secret?! The single thing that has litterally change it all! Meal prep! SERIOUSLY a game changer.

I hate leftovers.... like really had to get past that. It took some time but I found foods that were actually good reheated. Like chili, egg wraps, apple muffins made with almond flour.

Once you figure this piece out it will save you so much time, effort & energy. You don't have to think during the week.... you just grab & go.

THE very best part about planning ahead is.... I don't have to think until about Thursday! πŸ™ˆπŸ™‰πŸ™Š I can hook up spaghetti squash & some meatballs & they last most of the weekπŸ’―πŸŽ―πŸ’―! Spaghetti Squash
Cut in half, scoop out seeds. Baste with olive oil, salt & pepper.
Bake 375 for 35 minutes. When done use a fork to scrape out cooked squash.

Grass Fed Burger Meatballs
1 lb grass fed beef or chicken, lamb or turkey
1tsp minced garlic
2 tbsp onion
1 tsp dried rosemary
1 tsp dried basil
1/4 tsp salt
1/4 tsp pepper
2 tbsp coconut oil

Mix all spices together, then incorporate into meat with hands. Form into meatballs.

Melt coconut oil over med-high heat in large skillet. Sear meatballs on all sides then cover & let cook for 3 - 5 minutes.

Serve over top the spaghetti squash. Feel free to add a little more olive or avocado oil to your spaghetti before serving.... you don't need much!

Dinner with my boys! We are trusting our 14 year old daughter to go out with 11 other girls to mellow mushroom for a suprise birthday party. No parental supervision 😲😲😲! Letting them grow up is so tough! I feel horrible for that waitress! #imsosorry
