Things that count highly on my list as a diligent home cook are: using British products wherever possible, saving money by buying only what we need and reducing food waste by using any leftovers in meals the next day - but definitely not at the expense of taste! . .

Friday night's dinner came about because I found an out of date cauliflower at the bottom of my fridge. Rather than automatically throw it away, I stripped off the shrivelled leaves and cut any brown parts off. Then it was almost as good as fresh! #LoveFoodHateWaste
.
Earlier I had bought some half price reduced pork loins from @AldiUK which needed using up the same day. Then I found a single large sweet potato that was begging to be used. It looked kind of lonesome in the drawer without its cauliflower partner. No brainer. 😉
.
So rather than go to alot of culinary trouble when frankly, I was all about collapsing on the sofa with a cocktail or two✌... Instead I turned to my @TriedandTestedUK trusty trio from @RossandRossFood @SalthousePeppermongers and @TheSaucyAffair for inspo! Such a breeze with all of the hassle taken out but easily as much flavour being packed in to this meal..

I started by tossing the washed and separated cauliflower florets in #rossandrossfood Brussel Sprout Dust and Roast Potato Oil, seasoning with #salthousepeppermongers Smoky Salt. Into the oven they went for 40 minutes turning half way.

The sweet potatoes got sliced and oven baked dry on a baking sheet. Followed by the pork loins last thing being grilled on high heat. Serving was a breeze. I literally just opened up a bottle of partially used #FieryFiasco #rawsauce and poured over the top. Sprigs of coriander as garnish.

Boom!!

The heady spice flavour coming from the crisp cauliflower florets were complimented by the sweetness of the potato. The mildness of lean pork was given an edge with heat from #SaucyAffair.

INGREDIENTS
· 1 KG Rhubarb
· 300g The Groovy Food Company coconut sugar
· 1 orange
· 1 lemon
· A handful of pistachios
· Vanilla pods
· The Groovy Food Company Agave Nectar

INSTRUCTIONS
1. Preheat oven to 200 C
2. Zest and juice the citrus fruits, mixing them together in a big bowl with the sugar.
3. Toss the rhubarb in the mixture
4. Place on baking tray and drizzle with Agave Nectar
5. Roast for 15-20 minutes.
