I made @pinchofyum's lentil soup at least half a dozen times this winter. It may not look like much, but it is so simple & nourishing & totally delicious πŸ˜‹ I made it again today even though it's practically spring πŸƒ because I've been watching their #feedingabrokenheart series grow & thinking how totally bonkers beautiful it is that they've taken heartache & turned it into love & connection. I'm about to deliver some of this soup across the river to a sweet friend & think happy thoughts for all of you and yours ✨

These last few months have been heavy with the deepest grief and heartache we've ever known. And for me, those emotions have come hand-in-hand with losing my appetite. We've been so incredibly fortunate to have such a strong community of people supporting us, both online (hi! that's you!) and in person. Over the last ten weeks, we've had countless soups, lasagnas, tacos, enchiladas, and more dropped off on our doorstep by people who love us and love Afton, and it has helped me to find my way with food again.

It would be such an honor to Afton’s memory to have you generously share food with hurting friends (like ours did for us) as I way to say, "I see you, I love you, and I care."

We would LOVE to have you join our mini-movement during the next few weeks of this series. Here's how:

1) Think of someone who has a broken heart. A break up, a loss, a diagnosis... got someone in mind?

2) Make them one of the comfort food recipes in this series (like today's recipe: creamy potato soup 😍). Or email a restaurant gift card. Or snail mail chocolate chip cookies. No rules here – just lots of love.

Thank you for loving our little family through this intensely difficult time in our lives. We have read all your comments and emails - we've even printed literally thousands of them off to keep with all of Afton's clothes and blankets and books as a reminder of how much he is loved. last Friday, our friends invited us for dinner, and as we got in the car, I told Bjork: I don't think I can do it. I feel dead. I have nothing in me. I'm at a zero. but we did it anyway - we went and we ate veggie fajitas on homemade tortillas (perks of being friends with @thefauxmartha) and within a few minutes of eating, I started feeling better. like myself again. a little more alive. as we left, Bjork said: it seems like you really needed to eat a good meal.

that is the spirit of the Feeding a Broken Heart series. that is the real life thing that is happening STILL in my life right now. and that's why this series matters to me.

we wrapped up our FABH series this week, so in honor of you all, here's one last round of love for everyone who participated in our challenge to take care of others by feeding them a good meal. thank you for being so supportive to us after losing Afton, and for being so supportive of the others in your life who needed a little something extra to help them make it through. this has been so life-giving for us.

I'm kind of a delicate soul these days, but true story: I sat at my computer yesterday and opened an email with a picture of an elderly gentleman wearing big glasses and a sweatshirt with "DAD" across the front, smiling with his birthday cake and candle, sent to me by a reader who wanted to share that she had made him a POY recipe. and I cried. I am so lucky to get to do this weird food + writing thing for a job and even more lucky to have an amazingly loving community of people to do it with and for.

to those of you who are sitting in the middle of your own hard place right now, who are dreading a holiday weekend, whose hearts are bleeding out silently, please feed yourself something so comforting from this series and feel our love coming through for you. I'm totally in the trenches of grief, confusion, depression, and loss right there with you. this is so blah and so hard and extremely un-fun. but we're not alone. and speaking from experience: food can help. ❀ take good care of yourself.

Broccoli Cauliflower Nuggets.
One of my favorite recipes. I am sharing this recipe with @lindsaymostrom from @pinchofyum because she just started a series called #feedingabrokenheart
Many of you who follow my blog know that I have a 6 year old son who was born with a rare birth defect in his esophagus. 3 weeks in the NICU and a major surgery when he was only 1 day old saved his life. When he started eating solids he had trouble with so many foods. My heart was broken and my husband and I started looking at ways to make food easy for him to eat without getting it stuck at the surgery site. My husband was actually the one who came up with this recipe idea.

And my son totally loved them. Not only he could eat them without problems but we were able to incorporate veggies into his diet. He couldn't eat any fruits or veggies even cut in very small pieces until he was 3 years old!
And just like this recipe, we came up with many others, building a collection of recipes that were safe for him to eat. We also shared them in our esophageal atresia support group to help other families.
This is why I started this blog. Recipes to feed a broken heart. My heart. Watching him eat without problems and progressing into more solid foods and other textures helped me heal. It helped relieved the anxiety and constant worry. I used to worry at every single meal!
He is now 6 and can eat almost everything without problems. Yay! We still monitor him closely when he eats but for the most part, he can now enjoy many many foods.

I feel silly that I spent so long looking into whether or not I should buy an instapot (I didn't) because I've had an electric pressure cooker (same thing) for years. I pulled it out of hiding to make this Spicy Carrot Soup from @pinchofyum - delicious! It's simple to make, cooks up quickly, and is a nice switch up from expected flavors, as it's made with coconut milk, peanut butter, and red curry paste. Sounds odd, but it totally works! πŸ₯•πŸ₯„ .

Bringing back #sweatpantsunday and this time adding soup. This bowl of cosy deliciousness is carrot soup, recipe from @pinchofyum's series on #feedingabrokenheart. This series was started by Lindsay after her and her family went through an incomprehensible loss and as I watched the posts come up about what had happened, I had never felt more invested in something happening a world away from me to someone who I don't know. The posts Lindsay has done since are sincere, beautiful and completely raw. I recommend you check them out if you haven't already and definitely be prepared to shed a few tears as you read about their journey - I certainly have. spicy vegan carrot soup πŸ’£ also known as THE BOMB DIGGITY. made with just coconut milk, onions, carrots, garlic, curry paste, and - wait for it - peanut butter! cook it in the instant pot / blend it up. it's velvety magic, and bonus: health goals πŸ’ͺ🏼πŸ’ͺ🏽πŸ’ͺ🏾

YOU NEED:
8-10 large carrots
1 onion
3 cloves garlic
1 14-ounce can coconut milk
1 1/2 cups veg broth
1/4 cup peanut butter
1 tbsp red curry paste (video says chili paste but it should be curry paste 😽)
salt to taste

cook in instant pot for 15 minutes, or just simmer. when done, let everything cool for a few minutes, then run the mixture through the blender until smooth. top with peanuts and cilantro.

Had to share some pictures of our yummy food this week from @pinchofyum. After making the Mac N Cheese from the #feedingabrokenheart series, I found 3 other recipes to make. The creole chicken and sausage was a hit with the hubby. The chicken wild rice was perfect for a rainy day and we had enough to deliver to Great Grandma when we went to visit. We finished the week off with the Breakfast Burrito Casserole to help my dad celebrate his birthday and he even got to take some leftovers home!! #pinchofyum
