Spicy Seafood Noodle Soup?? This is one of my FAVOURITE dinners 😍😍 and of course it's super simple to make 😋
I usually make a big wok full which serves 4 (big portions 😁)
So here goes!!!!!!!!!!...........😆 To a wok add one onion, 3 cloves of garlic and a knob of ginger all roughly chopped.
Add next 2 sticks of celery, frozen peas, tomatoes and any other veg you might like 😊
Fill the wok with enough water to cover the mixture along with a fish or vegetable stock. (Please keep in mind when you're seasoning the dish at the end there is salt in the stock cubes.)
Add to the soup,some frozen prawns, about 300g of noodles (any type you prefer, I used egg noodles here), along with a small handful of chopped coriander and a tsp of chillies.
In a separate saucepan , add your mussels and steam gently for about 5 mins until all the shells have opened. I usually use the fab mussels from @aldi_ireland. You can get ones in a white wine or garlic sauce, both taste great.
When the mussels are done add them to the wok. Season with black pepper and serve .
Note: If you like your dish a little spicier don't be afraid to add more chillies. Also if any excess waster comes into your pan from cooking the mussels don't dare drain this away.
