Eating out doesn't have to be unhealthy. Myself and my friends treated ourselves to such delicious food in Sova Vegan Butcher. This bad boy is the pulled "porc" bap. The "porc" is made from jack fruit covered in a smokey bbq sauce. I couldn't believe I wasn't eating meat. The texture was the exact same. Fajita Friday πŸ‘ŒπŸŽ‰ Heres how I made them!!!!! 😍

To a pan add enough coconut oil to cover, when hot add 1 onion chopped roughly and 2 cloves of garlic.
Next add in 2 chicken fillets cut into strips.
When the chicken is white all over add a chopped red and green pepper, half tsp of chilli, half tsp of cayenne pepper and half a tsp of chinese 5 spice.

To a bowl add one ripe avocado along with the juice of half a lemon and a handful of coriander.
Give it a bit of a mash.
Crack in some black pepper

Serve the chicken and veg mix on a warm wholemeal tortilla and top with the avocado.
That's a wrap 😜🎬 P.S for an extra punch of spice add some chilli flakes to the avocado mix.

Pad Thai for dinner tonight yessssssss please!!!πŸ‘ŒπŸ΄ To a wok add one red onion, 2 cloves of garlic and a knob of ginger all roughly chopped.
Add next 2 sticks of celery, frozen peas, peppers and any other veg you might like 😊
Next add the frozen prawns and fry for a further 3-4mins until the prawns are hot through.
In a separate saucepan add about 250g of noodles, any type you prefer, I used egg noodles here.
When the noodles are cooked add them to the wok along with a tbsp of soya sauce and a big tbsp of chunky @meridianfoods peanut butter.
Stir it all up, season with black pepper and serve .

Spicy Seafood Noodle Soup?? This is one of my FAVOURITE dinners 😍😍 and of course it's super simple to make πŸ˜‹

I usually make a big wok full which serves 4 (big portions 😁)
So here goes!!!!!!!!!!...........πŸ˜† To a wok add one onion, 3 cloves of garlic and a knob of ginger all roughly chopped.
Add next 2 sticks of celery, frozen peas, tomatoes and any other veg you might like 😊
Fill the wok with enough water to cover the mixture along with a fish or vegetable stock. (Please keep in mind when you're seasoning the dish at the end there is salt in the stock cubes.)
Add to the soup,some frozen prawns, about 300g of noodles (any type you prefer, I used egg noodles here), along with a small handful of chopped coriander and a tsp of chillies.
In a separate saucepan , add your mussels and steam gently for about 5 mins until all the shells have opened. I usually use the fab mussels from @aldi_ireland. You can get ones in a white wine or garlic sauce, both taste great.
When the mussels are done add them to the wok. Season with black pepper and serve .
Note: If you like your dish a little spicier don't be afraid to add more chillies. Also if any excess waster comes into your pan from cooking the mussels don't dare drain this away.
