The fear of saturated fat began in the 1950s when Ancel Keys published a paper supposedly linking saturated fat/cholesterol with heart disease. The problem with this paper was he conducted a study and only selected the data that would prove his point, by examining 22 countries and only publishing the data found in 6 of the 22, ignoring the other 16. If he would have included the data found in all 22 countries, his paper would have shown that those who consume the highest percentage of saturated fat have the lowest risk of heart disease.

Cheesy buttery three egg scramble comin' at ya to remind you ~ DON'T BE AFRAID OF FAT! Fat does not make you fat - in fact fat is absolutely an essential part of any healthy diet. Consider that the cell wall of every single muscle and organ cell inside and outside of your body requires fat, as cell walls are comprised of two layers of lipids. Vitamins such as A, D, E, and K are all fat soluble and *require* fat to be not only absorbed but also stored within the body.

The trick is to eat healthy fats. Look for plant-based sources of high quality fats, found in delicious items like avocado, olives, coconut, plus nuts and seeds. Fats from animal sources can be healthy also, but be sure to buy organic, wild caught, local, and/or free range whenever possible for a quality range of fatty acids. Fats that are best avoided include cheap and heavily processed oils such as vegetable oil, canola oil, corn oil, and sunflower oil. Also avoid non-organic animal-based fats as much as possible, as research shows these poor quality foods have lower levels of anti-inflammatory omega 3 fatty acids as well as other micronutrients.

Here I'm sporting an omelet made with local eggs, garlic, and spinach topped with shredded cheese (not local nor organic because, hey, life 😊), plus @berlinnaturalbakery organic sourdough spelt bread slathered with local @ronnybrookfarm butter. DELICIOUS!
