lunch of the day! Yummy grill salmon πŸŸπŸƒπŸ˜πŸ˜ this meal is fresh, lean, fibrous, and high in protein πŸ΄πŸ΅β˜•οΈπŸ›πŸ²πŸ± here's what you need:

2 tsb of olive oil
A piece (50g ) of salmon🐟
1/4 carrot slice cut πŸ”ͺ
1 piece of tofu dice cut πŸ”ͺ
1/4 onion slice cut πŸ”ͺ
1/4 broccoli 🌳
A tomato (slice/ dice cut) πŸ…πŸ”ͺ
2 slices of lemons πŸ‹

here's what you need to do 🍲🍽 1. heat the olive oil in a hot pan πŸ”₯
2. grill the salmon (approx. 5 mins)
3. remove the salmon n put aside
4. pour in 2 glasses of water into the same hot pan (let it mix with the salmon oil)
5. Mix all the veggies into the pan
6. put some black pepper and rock salt (optional) - (mix approximately to 3 mins)
7. squeeze the lemon on top of the salmon

I guess I'm becoming one of those people who take pictures of their meals. My reason for doing it though is because it's mid February and I'm still sticking to my New Years resolution of eating nutritious food. I used to dread veggies and now I can't get enough off them. Keto Sundae:
1/2 Quest Bar (chocolate fudge)- melted and cubed
1/2c of strawberries & blueberries
1 Tbsp sunflower seeds
Heavy whipping cream

Ultimate Potato Omelet
6 large eggs, beaten slightly
800 g potatoes, cut in fourths (lengthwise)
1 small onion, minced
1/3 cup extra-virgin olive oil
salt to taste
Pour the olive oil in a large skillet. Stir in the onion to coat end let it to poach until translucent or slightly caramelized.
Meanwhile slice the potatoes: not too thin, not too thick. Stir them in the skillet to coat.
Cover with a heavy flat lid on it; but let some steam to escape.
It must be cooked oil-coated in its own steam; over medium heat, until tender but not brown. So flip at times.
When tender cut with a skimmer or spatula each time you flip it.
Then, let the flavors infuse together over minimum heat for 10 minutes. Salt now.
You may keep it until you decide to make the omelette.
Drain –if necessary- and mix with the eggs. In using a fork to combine you’ll mash the biggest potato pieces.
Heat the skillet very much. Pour in a splash of olive oil. Ladle the egg-mixture over high heat: we want the outside clotted but the inside moist.
Separate the edges from the skillet with the skimmer. And also shake the skillet for the omelette bottom not to get stuck.
Flip with the aid of a dish that you would have placed over it. And clot the other side.
