Grilled aubergine wedges seasoned with Chinese five spice, tamari, maple syrup + a few other random bits from my kitchen stash. Roasted courgettes. Simple cherry tomato salad w/ fresh parsley, red onion & spring onions. Delicious beetroot hummus - chickpeas, lemon juice, garlic, olive oil, sea salt, dried dill, grated beets and some coconut yogurt instead of tahini (ran out of tahini). The coconut yogurt worked so well and made it so creamy and delicious. A little rocket (arugula) and crunchy cucumber on the side + avocado!
