1. Cinnamon raisin bread, greek yogurt mixed with @justins peanut butter, sliced black figs, and crushed walnuts.
2. Mountain white bread, avocado, sautéed garlic kale, tahini, and pumpkin seeds.
3. Mountain white bread, @naturallymore almond butter, sweet potato hash (from yesterday!), and egg whites.
4. Cinnamon raisin bread, @traderjoes flax and chia seed peanut butter, banana slices, melted/mashed raspberries, and @naturenates honey. 👩🏻‍🍳🥑🍞 #toast

Grilled aubergine wedges seasoned with Chinese five spice, tamari, maple syrup + a few other random bits from my kitchen stash. Roasted courgettes. Simple cherry tomato salad w/ fresh parsley, red onion & spring onions. Delicious beetroot hummus - chickpeas, lemon juice, garlic, olive oil, sea salt, dried dill, grated beets and some coconut yogurt instead of tahini (ran out of tahini). The coconut yogurt worked so well and made it so creamy and delicious. A little rocket (arugula) and crunchy cucumber on the side + avocado!

The most fun @onepotatobox field trip! We've been racing around scouring markets and farms finding the most incredible produce. So many amazing finds and my kids have gotten to be the guinea pigs trying all the fruits and veggies I bring home. Tough job 💚 What's your kid's favorite vegetable?

Picked up all the ingredients for this beaut at the farmers market on sunday (the day I was struggling with toting around two minis 🙊), and it tasted SO darn good! It's a great reminder that all you need is a few simple ingredients to make the most delicious meals. 1 Taza de merey (cashews o anacardos o cahuil )
1/4 de taza de Harina de Tapioca
2 cucharadas de levadura nutricional
Sal Rosada de Himalaya
Jugo de limon
1 1/3 taza de agua

1. remojar las nueces por lo menos 2 horas hasta que estén suaves y lavarlas bien
2. en una licuadora agregar todos los ingredientes y mezclar hasta que la mezcla quede lo mas liquido posible. (Luego de esto hay un paso opcional, si quieren el queso quede suave y sin granitos, colocar la mezcla dentro de un cola-queso o un pano limpio de cocina y el liquido que suelte es lo que vamos a utilizar.
3. Agregar la mezcla a una olla a fuego medio y mezclar hasta que quede espeso y listo!

1 cup of cashews
1/4 tapioca flour (or starch)
2 Tbs nutritional yeast
Himalayan Pink Salt
Lemon juice
1 1/4 cup of water
1. soak the cashews for at least 2 hours until soft, and rinse.
2. add them in a blender with the rest of the ingredients. Blend until the mix is as liquid as possible (as an option you can put it in a cheese cloth or towel and get all the liquid in a bowl and get rid of the grains).
3. mix in a saucepan for 5min until thick, and thats it!

🌟Sweet Potato Fries🌟

Dukkah Crusted Sweet Potato Fries + Garlicky Tahini Dipping Sauce. An oldie (2014!), but a goodie.
1 1/2 teaspoon cumin seeds
1 teaspoon fennel seeds
2 teaspoons white sesame seeds
2 teaspoons black sesame seeds
4 teaspoons pepitas to scatter over
3-4 sweet potatoes (cut into rustic chips/wedges)
2 tablespoons melted coconut oil/olive oil
1 whole, unpeeled garlic clove for roasting (for the dipping sauce)
Salt + pepper to season
Tahini Dipping Sauce with Roasted Garlic
1 pinch salt
1-2 teaspoon chopped fresh herbs to garnish (parsley and chives work well)
75 ml tahini
75 ml lemon juice
2 tablespoons melted coconut oil/ olive oil
75-125 ml water (to achieve desired consistency)
1 roasted garlic clove (that was roasted along with your sweet potato fries)
For the fries:
1. Preheat oven to 190° C (fan). Line a baking tray with baking parchment.

2. Crush cumin & fennel seeds with a mortar and pestle. Pop crushed seeds into a small bowl with the sesame seeds. Place the potato wedges in a large bowl, drizzle over oil and toss potatoes to coat with the oil. Sprinkle over the seed and spice mix and toss gently to coat.

3. Place the coated potato wedges and unpeeled garlic clove (roast extra for later if you like) on the baking tray. Scatter over pepitas and/or sunflower seeds.

4. Bake for 35-40 minutes or until seeds are nicely toasted & wedges are baked. Turn them after 20 minutes if you like.

To make the Dipping Sauce:
1. Squeeze the roasted garlic out of its peel & pulse a food processor, together with tahini, lemon juice, oil, salt and 75 ml of water. Add more water to achieve the consistency you want.

2. When smooth & of desired consistency, transfer to a bowl and sprinkle over fresh herbs.
Serve Fries hot, with Tahini Dipping Sauce.
