1/3 ( or more if you want to multiply up) orange squash cleaned and wiped with a tad of olive oil and a sprinkle of salt. Roast at 180* until tender.
Scoop off skin into blender.
Add 1 TBS tahini
1/2 -1 Lemon juiced
Blend. Adjust seasoning/ add more lemon or water to préfères consistency, we enjoyed it as it was with crudité and fresh sourdough.
Perfect sandwhich spread/ taco filler / dip / just as a mash or purée with anything.
You could even use it as a vegan burger base, add chopped, softened onions and mushrooms, herbs, pepper and blend again. Bake or fry and pop in a bun!
