Woke up this morning feeling hungover and blah. No, I didn’t drink a thing last night except soda water BUT it was a mentally exhausting week. I fell asleep late in the afternoon, didn’t get my workout in and slept until after 8. I woke up STARVING and knowing I needed fuel for today’s emotional ride with my bestie and her family; a funeral to celebrate an amazing woman’s life.
People tell me all the time “I can’t eat like that”... “I don’t have discipline like you”... “it’s too hard to meal plan”...
Ummm, have you met me?!?! Worlds pickiest adult eater, I related to the kids more than the adults at the dinner table. But there’s something amazing that happens when you make a REAL effort to fuel your body right: your mindset changes.
I’ve spent the past 14 months trying to learn how to live with a wheat allergy and ignoring it on many occasions and paying the price. But what I have learned over the last four months is that my body thrives on a mostly plant-based diet. This morning it’s all about carrots, wheat free organic granola and plain Greek yogurt with a healthy dose of cinnamon. I always drink a glass of water first, my veggie next and I finish what I can and move on. Eggs, bacon and all those heavy breakfast foods just put my body into overload. Too much fat and I’m sluggish. It’s a process of learning what works FOR YOU.
