Scrambled eggs are one of the easiest things to cook in the kitchen. Despite this... you probably suck at making them.
They should be soft, light, and creamy not chewy, firm, heavy or watery.
There are a few common mistakes that people make when preparing scrambled eggs that completely ruin them.
1. People over mix their eggs. You should only whisk the eggs to the point that the yolks and the whites are fully incorporated. Any more than this and you loose the delicate texture.
2. People add milk or water. Milk is always a no no. It makes the eggs heavy and can curdle leaving you with watery eggs. A few drops of water may be whisked into the eggs to lighten them but it is unnecessary.
3. People salt their eggs too early. This can cause the eggs to turn green and tough. Don't salt the eggs until they are cooked.
4. People over cook them/cook them on too high a heat. The eggs should be cooked over a medium low heat and gently stirred so they don't stick and so you have big soft pieces. Stirring too vigorously will break the eggs into small firm pieces. The eggs should be removed from the heat while they are still slightly undercooked. They will continue to cook after being removed from the heat.
The eggs should obviously be served immediately.
