Thanks to my sister for turning me on to chickpea cookie dough! 🍫 I was really skeptical of this, but it turned out great. It was more like a protein ball to me but made for a great base, I'm thinking pumpkin spice chickpea balls this fall 🎃 I used my food processor and it took all of 15 minutes. Recipe adapted from @joyfulhealthyeats !!
1 can of drained, rinsed garbanzo beans
1 tbls chia seeds
1/2 cup peanut butter or almond butter
1/2 teaspoon cinnamon
2 teaspoons vanilla
2 1/2 tbls maple syrup (honey or coconut sugar could be substituted here)
And I used 3/4 cup @enjoylifefoods
Dairy free dark chocolate chips
Put it all in your processor, blend, then roll into balls and coat with chopped nuts! YUM!
