I did a Dong Ding comparison today. 2016 What-Cha and 2018 Eco-cha.
What-Cha Dong Ding:
Wet leaf had roasted notes and deep red fruit to it. Mouthfeel was thick and substantial, though slightly cloying.
Taste was heavy on the roast, developing an aftertaste almost like shandy. A sweet beer! Later infusions gave a sherbet sweetness.
Eco-cha Dong Ding:
Wet leaf smells of citrus, with great minerality. Mouthfeel light and juicy. A treat.
To taste, caramel, double cream, and slight lemon sours. Steeps grow towards more minerality, getting much thicker in mouthfeel. -- Leaf life was average for the What-Cha, with Eco-cha winning out on the steepage.
The two teas were so different, that I did an extra comparison test of putting the two together to try.
Oh my days! A genuinely good combo. Great balance, beautiful aftertaste, and flavours that linger and develop. Tea is such a good journey! -- This comparison was fun and rarely something I do. But it did open my eyes to just how different the two were. Before today, I hadn't noticed as much difference as this.
