Now that the warmer weather is here my favourite salad is back on the menu. Halloumi, zucchini and asparagus. It’s on a base of quinoa which is a great vegetarian source of protein. Zucchini is high in antioxidants, potassium, B-vitamins and Vitamin C and has anti-inflammatory properties. Asparagus contains lots of good stuff including iron, calcium, magnesium and antioxidant vitamins. I also added rocket (aka arugula) which is a bitter green - great for supporting the liver - avocado for healthy fat, and semi-dried tomatoes for colour. The halloumi is somewhat indulgent but it provides calcium and protein. And finally, a drizzle of extra virgin olive oil and a sprinkle of dukkah because it makes everything taste better. Delicious!
