No filter needed on this delicious meal! 😍🤤😋 Organic corn tortillas with black beans, green peppers, black rice and homegrown purple potatoes, seasoned with cumin, chili powder and pepper. I used (non organic) Hatch green chili enchilada sauce and a homemade organic tomato enchilada sauce. Topped off with some fresh avocado, cilantro and scallions. Pop into the oven at 375° for 30 minutes and voila. ✨✨I’ll be making this again very soon! 🤤🤤🤤 •

Been playing around with "congee" and I use that term loosely... soaked brown rice in turkey bone broth with salty seaweed, miso, and a date.
Still working on my ratios for the soaked rice and seeing if I can actually do it in a slow cooker.
Today topping it with pinto beans, sauteed kale and eggs, cheese, kimchi and kimchi hot sauce.
Sounds weird but is totally delicious! What can I say? Today is shopping day.. gotta work with what you have.
