These green little nuggets are nutritious, rich in antioxidants, can help increase levels of detoxifying enzymes in the body, potentially can reduce the risk of cancer and (when cooked right) make a BOMB side dish. These are a meal prep essential around here.
Here’s how I do it... Cut off the base of your sprouts (I save these to make a dairy-free veggie pesto along with my other veggie leftovers when I’m roastin’ 🔥), and then cut your your brussels into halves. Drizzle your baking sheet (or cast iron skillet) with avocado oil, lay out the brussels sprouts halves on the pan (evenly, so there’s not too much overlap), and coat in avo oil. Slice up a fresh garlic clove and nestle the slices in with brussel sprouts. Squeeze half a lemon over them, and sprinkle with himalayan pink salt and black pepper. Pop in the oven at 350 for 35-40 min (enough time to watch some Netflix, write a blog post, do an at-home workout, or pour a glass of wine 😉🍷) flipping halfway through, and - there you go! #happyhealthyjoe #mealprepiscool #eattherainbow
