I’ve been struggling so much lately. And at first I really didn’t know why. I mean honestly, I have nothing to complain about. Not really. I have typical every day struggles, but nothing different from what we all deal with.
But lately...John has had to work a lot of overtime. And much of it has been night shift. This puts a strain on our relationship and makes me feel lonely at times.
I ate crappy foods for a couple of those nights and it REALLY made it worse. I started putting off my workouts because I was dreading him leaving me each evening. And it just started spiraling and next thing you know, I was feeling really crappy and depressed.
I’m taking back control of my feelings! I’m choosing joy. And I’m choosing to be happier!
Today’s workout was completely done as a stress reliever! And my eating was MUCH better today.

I have discovered the perfect loaf recipe. This loaf is honestly life changing- it’s the answer to all my loaf dreams. This loaf is made of whole-grains, nuts and seeds. That’s it! Yep, so easy! no flour, no raising agents and it’s vegan and gluten-free. AND it’s easy as heck to make. and best of all you literally mix it in the same pan you bake it in. What?? I wish I could take credit for this one but I’ve adapted the recipe from Sarah Britton aka My New Roots.

Baked Cauliflower Latkes

This healthy baked cauliflower latke recipe will help you cut back on calories during holiday festivities.  Course Main Course  Cuisine Jewish  Prep Time 5 mins  Cook Time 10 mins  Total Time 15 mins  Servings 16 servings, 1 latke each  Calories 39 kcal  Author Beachbody

Ingredients

2 Tbsp. extra-virgin olive oil divided use

2 cups hot water

1 1½ lb. medium cauliflower cut into florets, hard stem discarded

2 large eggs

½ medium onion finely chopped

2 Tbsp. whole wheat flour

½ tsp. sea salt

¼ tsp. garlic powder

Instructions

Preheat oven to 400° F.

Line baking sheet with aluminum foil; brush foil with 1 Tbsp. oil. Set aside.

Bring water to boil in medium saucepan over medium-high heat.

Place cauliflower in a steamer basket in saucepan; steam for 4 to 7 minutes or until cauliflower is tender. Drain well. Dry with a paper towel.

Place cauliflower in a large bowl; mash with a fork.

Add eggs, onion, flour, salt, and garlic powder; mix well.

Using ¼-cup measuring cup, scoop mixture into patties and place on prepared baking sheet.

Brush the tops evenly with remaining 1 Tbsp. oil; bake for 10 minutes. Flip latkes and bake an additional 10 minutes or until crisp.
