Juice pulp hippie loaf

After and intense juicing session I had SO much leftover pulp and already had lots of dehydrator crackers so I needed to get creative. I had read on Pinterest about making meatballs out of juice pulp but I really wanted a meat loaf so I just went for it. First I sautéed an onion and a bunch of garlic with some Italian seasoning, s&p. I had some leftover tofu from the Ted Cruz protest so I mashed it up with a potato masher then added some corn flour, oat flour, and gluten free oats, a bunch of ketchup and bbq sauce, a few flax eggs and mixed it all together in huge bowl. I pressed it in a loaf pan lined with parchment paper, put a layer of bbq sauce on top and baked it for 90 mins at 350.
The awesome part is this made enough for two big loafs and they were great with mashed potatoes and steamed veggies. I love how you can see the pretty pulp colors in the last pic🧡💚

Big & lil salads for lunch. The main difference between my salad and my vegetarian daughter's salad (apart from the volume of greens) is that I have 10g of bacon pieces on mine.

Getting back on track yesterday went beautifully and easier than I had allowed myself to think it would be. I'm already within 2 lbs of where I was pre-vacation, and my pants are fitting much better again. Every time I start to wonder if this WoE is truly sustainable (yes after a year I do still sometimes wonder!) I prove to myself that it is and I remember how AMAZING I feel when I eat well. .

Judi's Weight Loss Tips ⚡️ Find Your Healthy Rut
One way to start the day right is find a good rut to get into for breakfast. When you know what you will be having and don't have to think about it,  you start off your day on track.  Having a good start creates a great mindset for the rest of the day.  One of my standard breakfasts for years has been a smoothie and I love it.  I follow the Eat to Live plan for my daily eating plan and I love getting lots of my GBOMBS in my 1st meal of the day.
I am often asked what is in my morning smoothie and here it is :) -
Everyday it is a variation of the same things. 2 Cups of liquid with almond milk or water. Sometimes half and half and sometimes all of one. 8-10 cups of greens (spinach, mixed greens, power greens, kale etc.) Always 3/4 cup beans, white kidney, cannelloni, pinto, black beans etc. Fruit and normally a banana and 1 Cup blueberries. And 1 T ground flax and then 2 cups ice to make it fuller and get more water :) Cheers!

//Citrus-honey chicken + roasted veggies// Marinade chicken tenders in EVOO, honey, lime, coconut aminos, salt and ACV.
Bake with marinade and add fresh rosemary, green onions, garlic, dried sage and ginger.

Here’s something you’ve been asking for. 🥑✨ A recipe for these Green Goddess Burgers! You can use these veggie patties with any kind of burger buns but if you’re an experimental avocado lover, give these avo buns a try! 👍🏽 #vanelja
Goddess Burgers

Makes 4

4 ripe but firm avocados
herbs
4 pineapple slices
organic mayo/ vegan mayo
fresh coriander
salad leaves

Veggie burgers:
Preparation time 25 min
Approximately 10 pcs
2 dl sun-dried tomatoes
1 dl sunflower seeds
1 dl cashew nuts (or for example hazelnuts or seeds)
1 red onion
1 tbsp Tamari sauce
pinch of sea salt
black pepper
+ any other spices to your liking

Heat the oven to 200 Celsius degrees. Rinse the sundried tomatoes and place them into a blender or a mixer. Add seeds, nuts and mix to a flour type crumb. If your blender is very small do this in two batches. Transfer mix to a bowl. Chop in the onion. Add soy sauce and spices. Taste and add any spices to your preference. Shape to about 10 small burger patties to a baking sheet lined tray. Bake for 15-20 minutes. Store in the fridge and use within a week.

Use for example with avocado buns which you prepare by cutting an avocado in half, removing the skin and stone and filling the avocado burger with a salad leave, veggie patty, mayo (vegan, if you like), pineapple slice and fresh coriander. Sprinkle some sesame seeds on top and enjoy! #eatclean #healthyfood #lifestyle #eattolive #foodforthought
