When it comes to dining, you can't go wrong at @deervalleyresort; every restaurant is worth a visit and has more than a few star dishes.
I wanted to revisit @thehirschdv to see what, if anything, has changed since DV took over management. I'm happy to report: Nothing! Same spot-on service, cheerful staff, upscale yet unpretentious vibe, Old World charm and yes, delicious food.
In order: Scallops, perfectly cooked, on parsnip puree with bacon jam. Schnitzel, light yet crisp on caramelized cabbage. Lamb chili, earthy and cheesy. Salmon rilette topped with housemade herb mousse and roe, served with fresh, salt-encrusted rye. And beverages by the fire. Highly recommended for lunch or apres-ski. •
