INGREDIENTS
1 tablespoon olive oil
2 onion, diced
1 carrot, diced
1 celery, diced
400 grams beef mince
500 milliliters tomato passata
2 garlic cloves, crushed
ยฝ teaspoon ground cinnamon
800 grams penne pasta, cooked
1 tablespoon melted butter
80 grams Parmesan cheese, grated
300 milliliters bรฉchamel sauce
ยฝ teaspoon nutmeg

PREPARATION
1. Preheat the oven to 180ยฐC/350ยฐF.
2. In a large frying pan, heat olive oil over a low to medium heat. Add the onion, carrot, and celery to make a quick soffritto. Fry them for 5 to 10 minutes, until the vegetables turn soft and translucent.
3. Add in the beef mince and fry for a further 5 minutes until golden brown.
4. Add in the tomato passata, crushed garlic, and cinnamon, and simmer for at least 10-20 minutes. The longer you simmer it, the more flavour will come out. This can take up to 2 hours.
5. Meanwhile, cook the penne pasta, then mix them with melted butter and 50 grams of grated Parmesan.
6. Place the pasta on the bottom of a lasagna dish, then layer on the tomato beef sauce.
7. Mix the nutmeg in the bechamel sauce and pour on top of the beef sauce.
8. Sprinkle the remaining parmesan cheese on top of the dish.
9. Bake for 50-60 minutes, until the top turns golden brown.
10. Serve and enjoy.

It's so simple and tastes so good! All you need is a good blender and some Almonds and your good to go! ๐Ÿ™Œ I use it for dipping fruits and veggies into, desserts like my Choc caramel treats a few posts back, in smoothies, drizzled on top of porridge, can be enjoyed with so many different foods!๐Ÿ˜œ

2 Cups Roasted Almonds

Throw into a high speed blender #vitamix and blend on low, gradually increasing the speed.. stopping to scrape down the sides once it gets "stuck" keep doing this for a while approx 7-8mins.. it will suddenly start to loosen and turn Into Almond butter!! Once it's smooth and creamy- transfer into a jar with a lid! That's it!!

I've been super lazy about my diet for the past few weeks. I've been slacking on macro tracking and eating a bunch of sweets. So I made 4 of these meals for the rest of the week's lunches. White rice, roasted peppers and onions, and chicken breast. Super yummy and a healthy balance of carbs and protein!

Avocado Toast never looked so good๐Ÿ˜ป๐Ÿฅ‘๐Ÿ‹ *Mash up โ˜๏ธavocado, add a drizzle of olive oil, juice from 1/4 of a lemon, โ˜๏ธzested garlic clove, cracked sea salt & black pepper and stir together!!! Spread on top of toasted sprouted grain bread and sprinkle with chia seeds and sesame seeds. ENJOY!!!

What if you were to appreciate your period as a loving form of communication from your body. A way for your body to check in and say "yep I'm working like I'm supposed to". Imagine getting excited for your period because you know it's a time where your senses are heightened and you put extra energy towards self love and self care.

There's a folk tale I read recently that explains how if we do not express our true self throughout the month then right before our period we explode and all kinds of extreme emotions come out that had been pent up. (Sound familiar anyone??)
