Ah shepherd's pie... Just another way the Irish came up with to eat meat (😷) and potatoes hahahah. Well, minus the meat and plus a butt load of veg, this meal is very vegan friendly, super healthy, and still one of my favourite comfort foods.
Boil 4-5 potatoes (depending on the size of your dish) while you prep the filling. It can really be any combination of veg and protein but here I used onion, garlic, zucchini, spinach, and Italian lentils. Add soy sauce, vegan worcestershire sauce (if you have it), a BUNCH of black pepper, and some thyme or rosemary to make the filling super savory. Then mash the potatoes (I just add non-dairy milk until the consistency is smooth enough to spread), add them atop the filling, and plop in the oven to broil for a couple of minutes until golden!
