🔥A plate of pure sunshine from the fire today. Grilled okra with Caribbean spiced crumbs and Jerk plantain, shallot and halloumi skewers. Lovely on a grey damp day, a bit of colour and spice to warm both lips and soul. Having battled one shitty cold already this autumn I’m determined to keep myself charged with loads of vitamin C and other good things. This salad definitely fits the bill: roast beetroot with thyme, orange, radicchio, almonds, extra virgin olive oil and then, for a protein hit filled with fabulous fibre, the Black Badger peas (aka Carlin Peas). You can buy the peas in tins or dried to cook from scratch (from @hodmedods), one of my all time favourite pulses, British too.
The peas keep you feeling full and satisfied for hours, also great for feeding your gut bacteria.......basically win, win, win.

Bull's Blood Smoothie

1-2 cups Bull's Blood
2 apples
1 orange
1 lemon
1 tablespoon chlorella
1 cup water

Aside from the non-vegan sounding name, bull's blood is awesome. It's actually a kind of red beet, and the leaves are really tasty and great for salads and in this case, smoothies!
Chlorrella, another favorite ingredient of mine with a wierd name, comes from algae. It's super packed with vitamins, iron, vitamin C, Omega-3s, and protein. Honestly it tastes aweful but has a lot of health benefits, so I add a bit to my smoothies and you sometimes don't notice it's there.

Roasted butternut squash risotto. I really love roasted butternut squash-it’s so versatile and has such a wonderful nutty sweetness. A couple of days ago I cubed and roasted one with crushed garlic, salt and olive oil. I used half in a soup (just added sautéed onion and stock then blended) and the other half in this superb risotto. I’ve had a couple of Parmesan rinds kicking around in the fridge for some time (I always forget to use them!) and added them to the risotto while cooking.
