When you hear the word “nutrition” do you associate it with “diet” and rabbit food and hunger? Because I don’t! I don’t live my life that way, I LOVE food. I find ways to eat the things I love while still nourishing my body and having #foodfreedom. ⠀
And I don’t want my kids ever think I’m on a diet. We bake and eat cookies and go to restaurants but they always see me preparing vegetables, drinking smoothies, working out, and striving for balance. 🍔🥦🥓🍉

So are casseroles totally not cool? ⠀
They’re kind of a running cultural joke where I live but when you’re short on time AND ingredients, you just throw some things together and top it with cheese. BOOM. Dinner 😂 ⠀
Honestly though, this Mexican version turned out pretty bomb, and my family ends up liking this better than any “gourmet” dinner I attempt (insert sarcasm on gourmet because I’m not an amazing cook lol). But it’s a good way to sneak in some healthy veggies and fiber and protein, and not be tempted to just screw it and pick up a Costco pizza down the road 🤪

I've not missed one day at the gym for a month now and have completely changed my diet to eating healthy and getting my fat from healthy fat sources.

I don't have a pic from before I started this journey but I did take this today. I'm actually starting to get abs and losing my "mommy tummy" and getting definition in my arms, legs, and butt. So happy with and proud of my results and dedication. This is only the beginning. 😁
