I bought this @vitalproteins matcha collagen a while back and haven't opened it yet. So, i thought today would be perfect. 🍵🍵
I mixed one scoop with hot water, 2Tbs canned coconut milk and about 1tsp honey. It's really tasty!!

Let’s talk staples: I walked into the kitchen and realized I didn’t have anything to eat for breakfast. However, I was very wrong!

Opened the cabinet that I keep stocked with all kinds of goods. Put together this breakfast option in 2 minutes flat.
1/2 cup oats
Dried cranberries
Milk
Walnuts
Almond butter
Chia seeds

Breakfast complete!

Not gonna lie, waking up to frost on the roof this morning made me miss our life in the Northeast ❄️ // moving is hard. But I’ve done it before, I know it takes time.
I can’t believe we’ve been in Texas for 4 months already, seems like just yesterday I was still in the midst of selling our home and all the stress of finding new schools and uprooting everything we know and love. Whew, glad we are past that now.
Also, how is it only TUESDAY?! This week is dragging.

I’ve been loving the breakfast pockets lately, I just scramble some egg with spinach and whatever veggies I have on hand, add some @traderjoes lite mozzarella cheese and fold it all up in a @cutdacarb flatbread. Kinda feels like a drive-thru breakfast without all the grease and processed filling 😜

* 400 g penne pasta
* 1 broccoli (head)
* 3 handfuls of kale
* 3 handfuls of spinach
* 3 garlic cloves
* 1/2 cups walnuts
* juice of a lemon

Hasselback Potatoes w/ Wild Garlic & Cashew Pesto 🥔🌿 by @vegaliciously 🍃

Ingredients:
100 g wild garlic or basil leaves
100 g cashew nuts
1/3 cup olive oil
1/2 rsp salt

400 g potatoes
METHOD:
1. Preheat the oven to 180 degrees.
2. Place wild garlic, nuts, oil and salt in a food processor and process until creamy.
3. Place potatoes between the handles of 2 wooden spoons and cut into thin slices.
4. Place on a baking tray covered with baking sheet and bake for 20-25 minutes.
5. Brush the potatoes with pesto and bake for another 5 minutes.
6. Enjoy!

Starting your day with #plants doesn’t have to be complicated. Keep chopped #veggies like onions, tomatoes, mushrooms and some greens in your fridge regularly to make it easy to sauté quickly in the morning. 1 cup oats
2 Tbsp raw honey 🍯
1/3 cup almond butter
1/2 tsp vanilla powder
3 tsp matcha 🍵 powder

To say I am excited about being featured on this website is an understatement. I met the lovely founder, Georgie, at an event in Sydney many, many years ago just as she was launching TGT. We were two mum’s, chatting about life with kids (we both only had one back then, oh the simple days!).
