Many years ago, I was an avid canner. I'd can peaches, berries, pickles, jams, salmon, onions, beans, asparagus, beef and chicken.
I don't have a chest freezer so when I'd come across a great sale, I'd can it.
I have a few jars of canned chicken kicking around. I put it to use and made a chicken pizza crust with it.
To make the crust I kinda winged it.
300g cooked/canned chicken breast
1/4c finely grated parmesan cheese
1/4c Bake in a Minute Mix
dash salt & pepper
1. Mixed it well and flattened out on a parchment lined cookie sheet.
2. Baked in a 350F oven for about 15 minutes until slightly brown.
3. Took out of the oven and lifted up the edges to let some of the underlying steam escape. (I should have used a perforated bun pan)
4. Top with desired toppings and bake until cheese is melted and golden.
I'm pretty happy with this, I think I'll add some seasonings next time. It's quite filling and satisfying. 😋
