Swipe for flagrant egg porn. I have 3 more working weeks of this year before holidays. After that you can mainly find me on a beach in Mexico eating tacos. One of things I look forward to the most about holidays (other than quality time with my family obviously) is eating random savoury things for breakfast. Most places in Asia are amazing in this respect; Curry for breakfast is to my mind at least, pretty unbeatable. So with that thought I am broadening my range to look at fine dining interpretations of breakfast. This one was made from the leftovers of the last two dishes. Plus eggs. Gotta have eggs.

A lot of people ask how I find the time to make these over the top dishes whilst trying to be a good Dad and husband, and juggling a very demanding day job. Well clearly I don’t always manage, and clearly life is not really always like the heavily edited version of reality you see in my Stories. But that saying is certainly true that if you love something enough you’ll find time for it, and luckily I don’t need much sleep. Today was a little of a microcosm if that struggle, with me starting the dish the night before once everyone was in bed, getting the cooking on before breakfast this morning, and then trying to fit in the gym and a full work day, before finishing it. Somewhere in there I made a spanakopita as a veggie alternative. Thankfully I have a very forgiving wife. I love you very much @petitenadi . I’m sorry this dish is the opposite of vegetarian.

Medley of lamb. Neck sous vide at 54c all day, seared kidney, crispy sweetbread, panco’d bonbon of shank slow roasted all day with sage, pea, Jerusalem artichoke crisps (with smoked paprika) and cream, alfalfa cress, jus from 2 kg of lambs bones reduced to a few teaspoons.

Firstly thank you all for getting in contact about yesterday’s slightly emotional post. Today’s is about inspiration and it’s many sources. I knew the minute I saw the hare fillet I would do something with circles. Bizarrely this morning in the gym a beautiful track from the early years of D&B back in 1995 came onto my iPod - Adam F’s ‘Circles’. As you may have noticed if you’ve followed my stories that another huge passion of mine is music, and (amongst many others) this specific genre is very close to my heart given it was a big part of my life as a young man: sneaking out of the house to go raving in the middle of a pitch black field at 13; being there for the beginning of London’s pirate radio scene when the whole style was born. For many years I was a DJ. But I digress... circles. Here you are.

I've started writing down dish ideas on my phone when the occur to me. It's helped quite a lot in clarifying my thoughts and just looking at a list of ingredients also seems to highlight what is right and what not somehow. Today I actually sketched the plating too (see stories)... the result isn't actually that far from what I had in mind. Eel is always a good idea, but this bacon cream OMG. I could drink pints of this..,, Just going to phone my cardiologist...

On Saturday we went for lunch at Envy, which was a regular haunt when I first moved to Amsterdam and lived on the 9 streets in the centre of the canal belt. 5 years later we had a game of two halves. The food is still great; Interesting, thoughtful and punchy. The service; Frankly appalling. Indeed it’s the food alone that stops me even writing about how bad the whole experience was. We’ll suck it up, take a deep breath, try to forget about sitting in front of dirty plates and being charged for dishes we didn’t even eat, and hope it was just one of those days.

I woke this morning with an unbelievable longing for a bowl of eye-wateringly hot pork ramen. Luckily I had a 2/3 prepared piece of pork belly in the fridge and a bag of pork stock in the freezer. The stock got amped up with a tonne of chilli, garlic and ginger and then clarified using egg whites. The end result wasn’t exactly your conventional ramen, but I’m afraid that’s not what you get on this feed. ;)
