Green Fig (Banana) Takari.
I have been wanting to make this dish for quite some time now, but had to patiently wait until I could get Green Figs (Green Bananas) at one of the local stores here in #upperleftusa. As luck would have it, I found Green Figs (Bananas) at the store a few days ago. As with most of the recipes that I make this is one that I watched my beloved Grammy make over & over again. Ingredients -Green Fig ( Bananas), Onions, Garlic, Chandon Beni (Culantro), Scotch Bonnet Pepper, Salt, Oil, Water. Quite often Grammy would vary her recipe with ingredients such as Pimento, Thyme, Curry or bit of Salted Cod (bacalao) that she had fried to a crisp. When I make this recipe I change out the water for stock or coconut milk.
More than likely Grammy would pick a hand or two of green figs from a bunch that was ready to be cut from her garden. She would rub a bit of coconut oil into the palm of her hands before peeling the green bananas so as to avoid getting the sticky sap from the green banana skin stuck to her hands. Green figs would be cut into little bite sized pieces after they were peeled, and quickly stuck in a bath of room temperature tap water so as to stop discoloration/browning of the peeled pieces.
I have vivid memories of this dish being cooked over an open fireside in Grammy’s outdoor kitchen, a heavy bottom pot would be placed over the wood fire, oil would be added to the pot. Once the oil was heated, onions, garlic & hot pepper would be added to the pot and cooked until softened, chadon beni would be added and allowed to cook for about a minute. Next the green fig/ banana pieces would be drained and added to the pot, all the ingredients would be allowed to fry until a bit of browning started at the bottom of the pot, liquid is then added to twice cover the green fig/banana pieces, the contents of the pot is allowed to simmer until the green fig/banana pieces are near fall apart & the gravy has thickened. Season with Salt & Voila!!
