Trini Cou Cou/ Coo Coo is on the menu today. This dish is made with a medium coarse ground 🌽 similar to some Polenta dishes. The recipe for this particular dish varies throughout the Caribbean and admittedly I have my own variation on the method of cooking. Ingredients include but are not limited to, Cornmeal, Ochro, Coconut Milk, Garlic, Onions, Scallions, Pimento( I didn't have any today so I used Bell Pepper, definitely not the best substitute but I work with what I have folks), Chado Beni, Thyme, Olive Oil, Thai Chillies, Salt & Black Pepper. My method is fairly simple, but certainly not the traditional way of cooking Cou Cou. I start by sautéing the garlic, onions, thyme, scallions, chadon beni & peppers in olive oil ( I use my cast iron skillet for cooking this dish). After the initial ingredients have cooked a bit and softened the ochro is added along with Salt & B/pepper, the ingredients are allowed to cook for about 2 minutes then the coconut Milk is added. At this point I mix the cornmeal with water. When the ochro seeds start turning pink, I lower the heat under the skillet & start adding the cornmeal & water mixture to the skillet slowly, while constantly whisking/turning the mixture in the skillet. This goes on until all the cornmeal water mixture has been added to the skillet and the mixture in the skillet has cooked until the folds have started to set when you turn the mixture. Set aside and allow to cool. I serve the Cou Cou directly out of the skillet, you can however turn it over unto a serving platter. Traditionally, Cou Cou is served with a hearty Stew, like a Creole Stew Fish or a Beef Stew, however, I tend to break tradition & serve it up for breakfast with my favorite Drunken Eggs & Bacon or maybe even for lunch with a side of vegetables or a salad.
