DINNER! Last night we had chicken schnitzel with roasted veggies and cauliflower mash 😍

BUT! the schnitzel isn’t all it seems. I was inspired by @jshealth. Instead of crumbing the traditional way, I opted for almond meal with lemon, olive oil, parmesan cheese and a hint of parsley fresh from our garden.
Almonds are far lower in fat, in fact less than a third of dry breadcrumbs! It is also high in protein, WIN/WIN!✌🏼😋

I can clearly remember the first (and last) time I tried salmon patties. I was about 18 years old, on a date at one of the fancier restaurants in my hometown. I wanted to order fish because I was trying to be sophisitcated and the idea of salmon patties intrigued me. They arrived…I took one bite and that was about it. They were not at all what I had hoped for. I’ve never ordered them or made them since. Until about a week ago when I saw the Asian Salmon Patties that @thedinnershift had shared. I had a lightbulb moment. Take those and transform them into Teriyaki Salmon Sliders! If anything could transform canned fish, it has got to be teriyaki sauce and my kids love anything served on a slider bun. |

People wonder why I don't eat out. It's because I know what the hell I'm doing. Here's a little known fact about me: I'm a certified Nutritional Consultant experienced in making Vegan meals for large groups for over 10 years (All completely volunteer, and there were NEVER leftovers). Not only that, but I like to have as much control over my Health & Well Being as I possibly can. Eating at home ensures that I'm eating food prepared by someone with good vibes and positive energy. I also make sure there are no additives or preservatives in my food since it's prepared fresh right in front of me using all fresh ingredients. I don't have to guess if it's organic or if it fell on the floor, or if it was sitting around--as I would wonder in a restaurant. Anyway, this meal (like any meal I make) takes maximum 15 minutes to create....
***Ingredients: Brown rice/quinoa noodles
1 carrot
I red bell pepper (julienned)
1/3 red onion (sliced)
1/2 large zucchini (chopped in 1 inch squares)
Olive oil 1-2 tbsp
Grey moist Celtic sea salt 1/2 tspn
Crushed red pepper 1/2 tspn
Indian curry powder 1/2 then
Directions : prepare the noodles (along with the one sliced carrot) as directed on package (bring water to boil and then add noodles, etc).
At same time sautée onions for 2-3 minutes on medium heat. Next add bell pepper and sautée for another minute. Next add zucchini, seasonings and 1/4 cup of water. As steam rises from adding the water, quickly cover the pot. Lower heat to low and simmer 3-5 minutes depending on how soft you like your zucchini. Makes 1-2 servings
