This is my breakfast (break-fast) for #ketoday2. 🍳 I chose scrambled eggs with cheddar, spinach, and heavy whipping cream. It's pretty good! I forgot how good spinach is when cooked! 🍃 I got the recipe from ruled.me (just search Spinach Cheddar Scrambled Eggs). In half a serving (which is what I'm having) it has 356.5 calories, 28.6 g fat, 2.7 net g carb, and 21 g protein. I also had #ketoproof coffee with heavy whip cream & coconut oil. Better than yesterday's butter coffee! ☕
I enjoyed the meal, but it is more difficult to cook in the mornings with a toddler. He doesn't have the patience to wait for me, so I feed him first. By the time I'd followed the recipe, measured ingredients, and cooked, Theo was done with his food and throwing it on the floor. Then I set him up with crayons and paper so I could eat and he was yelling to get out. 😲 It's definitely going to take some preparing ahead and maybe some timing my meals so Daddy can watch Theo.
