My Vegetarian Three Cheese Stuffed Peppers were so good! I made 5 halves ahead of time, then brought some on my trip. These ones I reheated in my oven, broiled for a minute, then topped with sour cream for dinner last night. They were amazing! I just love that you can use things like hot sauce and sour cream on the #ketodiet! As long as I measure and remember to add them to my nutrient count! I was so full, I couldn't finish the last one. Super yummy! πŸ˜‹ I got the recipe from Ruled.me. like I've gotten all my recipes! Super delicious and I love stuffed peppers even when I'm not on a diet, so I'm happy to eat familar things on #keto. I have quite a few foods I like already and that's helping me enjoy this diet and all the dreaded cooking. (I'm such a whiner! 😭 I hate cooking with more than two steps! πŸ˜‚)

I brought #keto foods with me on my weekend getaway to help me stay of track! I packed two red pepper quiches to reheat in the microwave, an avocado, and last minute I also threw in a collard wrap in one of my reusable snack bags. I put them all in my cooler bag from Tupperware that I got at my bestie's mom's Tuppeerware party. Isn't it so pretty? I'm a sucker for gorgeous ocean prints! 🐚 This kept them cool for hours all day, since we forgot to put them in the fridge right away! Bringing my own foods made it easier to stick to my #ketodiet out of town. Of course, I did have a few items off-keto (like a Jolly Rancher Mixed Drink πŸΈπŸ˜‚) so today I am working on getting back into #ketosis. I was able to order Veggie Fajitas at the Mexican Restaurant and without the tortillas, it would be Keto Friendly. It was harder last night at the Chinese place. Stir Fry Veggies would have been a good thing to order, in hindsight. Getting back on track today with Keto meals and long walks. Hope to be back in Ketosis tomorrow night. Oh, and I did lose 3 pounds this week! Before the weekend, I was down 5 pounds! πŸ™Œ Whoo-hoo!

Nailed it! The trick to having the egg the way I want it is:
1.) More egg white surrounding the yolk so dig a bigger hole in the avocado. Not longer, but deeper. See how it sits inside the avocado and doesn’t spill out?
2.) Timing. 425 degrees for 17 minutes for me.

🍳 My #keto breakfast yesterday. Spinach and Cheddar Eggs like the day before, but this time, a full serving and made into an Omelette. Yum! πŸ˜‹ I had another of my Collard Greek Wraps for lunch. I skipped dinner because I wasn't feeling well at all and had to lie down. Cooking on my feet for almost an hour did NOT sound good. I had a headache that lasted from 4 pm to 4 am. Not sure if it was the keto making me feel this way or another one of my random headaches. I drank a ton of water, laid down and rested, and my mom brought me a powerade zero.
Phew! 😒 I did weigh myself this morning and I have lost over 3 pounds! So that's motivating. Anyone else get headaches on the #ketodiet??

My #keto lunch & dinner. I had Vegetarian Greek Collard Wraps and they were SO yummy! I love tzatziki & feta cheese so I really enjoyed the taste. πŸƒ It was fun wrapping up everything in a leaf, too. Theo was very skeptical of me eating leaves. πŸ˜‚

The Fried Mac & Cheese Patties made of cauliflower and cheese caused a bit of trouble! I tried to fry them but the recipe didn't specify how much oil so I overdid it. πŸ”₯ The entire house except Theo's room filled with smoke! Thank goodness he was in there napping. Barry had to try to open all the doors and fan it out while I tried to save my patties. They were VERY burnt. I don't think I'll make them again. 😡
I got both recipes from the Ruled.me website. βž• My total calorie & protein came in a little low, and my carb count too high, but I got exactly enough grams of fat.
I made a more balanced plan for tomorrow, so we'll see how it goes!

This is my breakfast (break-fast) for #ketoday2. 🍳 I chose scrambled eggs with cheddar, spinach, and heavy whipping cream. It's pretty good! I forgot how good spinach is when cooked! πŸƒ I got the recipe from ruled.me (just search Spinach Cheddar Scrambled Eggs). In half a serving (which is what I'm having) it has 356.5 calories, 28.6 g fat, 2.7 net g carb, and 21 g protein. I also had #ketoproof coffee with heavy whip cream & coconut oil. Better than yesterday's butter coffee! β˜•
I enjoyed the meal, but it is more difficult to cook in the mornings with a toddler. He doesn't have the patience to wait for me, so I feed him first. By the time I'd followed the recipe, measured ingredients, and cooked, Theo was done with his food and throwing it on the floor. Then I set him up with crayons and paper so I could eat and he was yelling to get out. 😲 It's definitely going to take some preparing ahead and maybe some timing my meals so Daddy can watch Theo.

When I first read up on #keto, I was surprised to find they recommended starting with a 24 fast with nothing but #ketoproofcoffee in the morning, and water and Powerade Zero all day. 😬 Eek. On top of that, it's suggested you go for a 4 (FOUR?!?) hour walk after waking up to put yourself into #ketosis. 😡 I just don't think a 4 hour walk sounds safe or healthy for me on no food.
So I modified it, and I did an hour walk this morning and I'll go again this evening. I am actually feeling fine for not eating real food today. I've done a bunch of housework and played with Theo like usual. Loving the Powerade Zero.
